Roasted chickpeas are a great snack.

 

I saw a new recipe today ... Roasted Salt & Vinegar ChickpeasI plan on trying in on Friday.  (I'm busy tomorrow.)

 

Somewhere around here I have a similar recipe - but with Indian spices ... gotta go find it!

Love roasted chickpeas. I get emails for a couple of daily recipes from 'allrecipes.com' and this exact one was just offered yesterday in fact.  I usually toos mine with spices and a little olive oil - very good.

@ALRATIBA   Thanks for reminding me!  They sound great and it is amazing how good chickpeas are when you cook them at home rather than buy the canned ones!

 

The canned ones are good too though!  Woman Wink

Chickpeas are just about the only legume I can stomach (many other beans gag me).

 

I'll try from dry, too - been making my hummus from canned, but that could change.

I like to microwave the chickpeas before roasting and dusting with BBQ spices (recipe from Cook's Illustrated:

 

15-oz can chickpeas

1 1/2 tbsp extra-virgin olive oil

1/2 tbsp smoked paprika

3/4 tsp sugar

1/2 tsp garlic powder

1/4 tsp onion powder

1/8 tsp salt

pinch of cayenne pepper

 

Drain chickpeas in colander for 10 minutes.  Line a plate with 2 layers of paper towels and spread chickpeas in even layer.  Microwave until chickpeas are dry, 8-12 minutes.

 

Place dried chickpeas in layer cake pan and stir with oil.  Spread into single layer and roast at 350 degrees for 30 minutes.  Stir BBQ mixture spices together in dish.

 

Stir chickpeas and move to center of pan. Keep roasting until deep golden brown, 20-40 minutes.  Test for doneness when soft on the inside.

 

Place in bowl and toss with spice mixture.  Let cool for 30 minutes.

Love plain, roasted chickpeas!

When I do my weekly potato batch cook, I’ll always squeeze

in a tray of chickpeas to roast.  Just leave them in an open container

in the frig...grab a few when I want a snack!
