This is a satisfying easy and economical weeknight meal.

Place 2Tbsp melted butter in a 13" x9" baking dish.

Stir in 2 /12 cups chicken broth, 1 cup raw rice (Arborio if you have it, but any short grain rice will work) and 1/2 diced onion.

Bake covered in a 400 degree oven for 20 to 30 minutes until rice is tender and liquid is absorbed.

Fluff rice with fork, then stir in 1cup cubed, cooked chicken, 1 cup cubed mozzarella cheese, 1 cup halved cherry tomatoes.

Top with a sprinkle of fresh basil and parmesan cheese.
