Ricotta Raspberry Cake - question

A couple of months ago, someone posted a recipe for a ricotta cake that used frozen raspberries.  Many responded positively saying they had tried it and offered suggestions for different fruits and other tweaks.  I cannot find the original thread (although I do have the recipe) and I think it must have disappeared with many of the other recent threads.  Anybody remember what the suggestions were that people offered?

 

Here is the recipe (Note is from the original poster):

 

Ricotta Raspberry Cake

1 ½ cups all-purpose flour

1 cup sugar

2 tsp baking powder

Âľ tsp kosher salt

3 large eggs

1 ½ cups ricotta

½ tsp vanilla extract

½ cup (1 stick) unsalted butter melted

1 cup frozen raspberries, divided

 

Preheat oven to 350 F and grease a 9 inch diameter baking dish.

 

Whisk flour, sugar, baking powder , and salt in a large bowl.

 

Whisk eggs, ricotta, and vanilla in a medium bowl until smooth; fold into dry ingredients until just blended. Then fold in melted butter, followed by Âľ cup of still frozen raspberries, taking care not to crush berries. Scrape batter into prepared pan and scatter remaining ÂĽ cup berries over top.

 

Bake cake until golden brown and a tester inserted into the center comes out clean, 50-60 minutes. Let cool at least 30 minutes before unmolding.

 

Note: I only used 3/4 cup of sugar and it worked out just fine.

The cake is light and delicious. Enjoy!

I made it using fresh raspberries.  Blueberries also work nicely.

Thanks Scooby Doo!  I have all the ingredients except raspberries.  However, I do have a container of fresh blueberries.  So, I will try those and maybe add some lemon zest.  I just thought maybe the fruit being frozen and thawing as it baked might make a difference to the texture.  The sounds like it will be a nice summer dessert.

I am contemplating getting some strawberries or raspberries too and making it red, "white", and blue for the upcoming holiday...
