I bought a bag of it at Trader Joe's. My original idea was pizza crust, but am using gigantic zucchini slices instead for that. So, any suggestions will be welcome. I can always throw it on salad. Even a 1905 salad!

I've never seen bagged riced cauliflower, but I've made it many times on my own by shredding it on a box grater. (I really don't like the ricing part because little pieces fly all over the place, it's a little messy).
I"ve used it several different ways, you can really flavor it any way you would flavor regular rice. I guess my favorite is to saute chopped onion, celery, maybe scallions in place of the onion and season it with some lemon and sesame oil.. Or onion, celery and finely chopped red or green pepper, garlic etc.
It really is a good rice substitue. For some odd reason, I don't really feel I'm tasting cauliflower when I make it those ways. The cauliflower taste is masked, I guess by the other flavors, and I really does look like rice.

Hi! I just started using riced cauliflower this year, while making healthy diet changes and losing some unwanted extra poundage![]()
Mostly I've used it in place of brown rice (still healthy but while losing I was limiting even my healthy carbs) especially with a chicken chow mein dish I make. Without any rice it wouldn't have had enough substance for me so the cauliflower rice worked great. I made the chow mein first, basically chinese veggies, onions, celery and browned chicken pieces in a veggie &/or chicken broth...then I microwaved the c. rice and put the chow mein over it in the bowl. Yummy.
Other dishes I might try to brown the rice in a pan to see if it takes some of the moisture out, makes it mimic browned or fried rice....haven't experimented with that yet, but I've been told that works too. I think you will find yourself thinking of many things to make with it...cauliflower substitutes may seem like the latest fad now, but it truly is one of the best carb fake-outs. You ever do a cauliflower mashed potato fakeout? Especially if you add flavors...cheese, cream, chives, dill...in the food processor after you steam the cauliflower...it's yummy. I too want to try the cauliflower pizza crust...don't have a recipe yet; if you find a good one and have success with it, let us know!

ps. It MUST be popular these days...my one lament...is being able to get to it on my weekly shopping trip...that section in my grocery store is ALWAYS empty if you aren't there early.

I too have made it myself, one of those time the grocery store was out of it...and to avoid that mess you talked about with a box grater, a small food processor works great. I just have a small Quisinart that didn't cost much, in case you don't have one...just fyi. ![]()

Thank you for the tip! I don't have a food processor anymore, although I do have a small Kitchen Aid chopper. It's kind of small, but I'll give it a try.

My favorite way to use riced cauliflower is cauliflower tots. You can use the pre-riced or make your own with the food processor. Here is a link if you'd like to check it out.

I have never used the bag but when I make it fresh (vitamix first) I put evoo in pan and sauté the cauliflower a few minutes on med heat. Then when I feel it has softened, I add Frank's hot sauce and butter (smart beat or smart balance). Cook till Frank's sauce is all absorbed. I add a little more butter at the end. Everyone goes crazy for it. Hope you like whatever you try. Enjoy!

I am gluten free so I use it for pizza crust. I make my own in a juicer and use the pulp for the crust and the cauliflower juice in soups and stews. It's easier this way instead of trying to squeeze all of the liquid out.
I also make cauliflower rice cakes and fried cauliflower rice, it's good in chicken and rice rice recipes too.
