Rice Pudding

4 cups milk

1 egg...beat well

1 pkg (4 serving size) Jello Vanilla Pudding.....DO NOT use instant pudding!

1 cup minute rice

1/4 cup raisins (optional)

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

Put the milk and egg into a saucepan. Gradually add the pudding. Mix well. Add rice and raisins. stir over medium heat heat until it just starts to boil. Cool 5 minutes stirring twice. Pour into dessert dishes or a serving bowl. Sprinkle with cinnampn and nutmeg. Serve warm. For chilled pudding: Place plastic wrap or wax paper over the surface of HOT pudding. Refrigerate for at least 1 1/2 hours. Stir before serving. Sprinkle with cinnamon and nutmeg.

Thank you, LBM. My SIL loves Rice Pudding and this one sounds different (and easier) to make. Love your recipes!

I don't usually use ""home made"" recipes that use a mix. Isn't it just as easy to make it from scratch?

I have a chocolate chip cookie recipe that calls for instant pudding mix, and those cookies are so good - not sure how to make the recipe for instant pudding mix; do you have a recipe for that? Can you share, if so?

Also, many cakes made from scratch come out very dry and I like mine moist and soft!

It's fun to experiment with different recipes, and I think some that call for some type of mix can be easier than making the mix??

No one HAS to use mixes in recipes - just feel free to make it from scratch!

If you have a recipe to use for the pudding mix that we can add to this recipe, I'd love for you to share!! Thank you!

SIL loved this!!! Once he saw the recipe on the counter, he begged me to make it for him. It was delicious! Thanks again.

Yes rice pudding is pretty easy to make from scratch without a " mix" ..but in all fairness, OP never called it " home made"....
