Maybe your rhubarb is ready for cooking. It just stopped snowing here in MN. At least, I hope it has stopped!
Rhubarb Pie Dessert
Crust:
2 cups flour
2 tbsp. sugar
1/2 cup soft butter
Combine above ingredients and pat into bottom of a 13x9" pan. Bake at 350* for 15 minutes.
Filling:
5 cups cut-up rhubarb
3/4 cup thin cream or milk
2 cups sugar
3 tbsp. flour
4 egg yolks
Mix sugar and flour in a saucepan; add chopped rhubarb and cream.
Cook until rhubarb is done - about 5 minutes.
Add slightly beaten egg yolks and pour over baked crust.
Topping:
4 egg whites
6 tbsp. sugar
Beat egg whites until stiff; add sugar and drop on top of filling, covering entire top.
Bake at 350* for 12-15 minutes. Delicious!
