O.K. I made this up today. I wanted to fix a salad with dinner (lasagne & Texas toast), but I didn't have enough lettuce; just a very small heart from a head of leaf lettuce. So I started with that. The leaves were so small, I didn't even have to tear them into pieces.

I added the heart and stalks of the center of a bunch of celery cut up.

Then I added several large raddishes, sliced.

Next I added little clumps of cauliflower, bite-sized florets

Then I cut up three large green onions, little slices.

Next came some sliced carrots, two whole carrots.

Then I grabbed two golden delicious apples and cut them up into bite-sized chunks.

That was all the crunchy stuff I had on hand. Broccoli would have been great, too! Green or red grapes would have also been delicious!

I fixed a home-made Thousand Island-style dressing w/o the "islands." I mixed mayonaise, catsup and the juice from one fresh lemon off the tree. Blended it well and poured it over the salad.

It was delicious!!! I learned I don't need a lot of lettuce, or even any, to make a delicious, healthy salad! A salad can consist of anything we have on hand, either fruits, veggies or nuts.
