Ree Drummond's Root Vegetable Beef Stew

I missed today's Pioneer Woman "Special Delivery". Does anyone have the recipe for her root vegetable beef stew? I can't find it anywhere! I love root veggies! I always throw a green plantain in the mix when I cook them(roasted or boiled)...I love them too!
