Coconut Cake         RiverRat

yellow cake mix

1 small box instant vanilla pudding mix

1-1/3 cups water

4 eggs

1/4 veg. oil

mix & pour into a greased & floured 9x13" cake pan. Bake at 350* until cake test done. Cool & frost cake

Frosting

4 tbsp. butter soft.

1-3/4 cups flaked coconut

8 ounce cream cheese, soft.

2 tsp. milk, 1 tsp. vanilla

3-1/2 cups powdered sugar

Mix & frost cake

Use 1/4 cup of coconut to toast for top of cake

Cookies
1 French vanilla cake mix
1/2 cup plus 3 tablespoons all-purpose flour
3 large eggs
1/3 cup vegetable oil

Icing
1/2 cup unsalted butter, softened
1/3 cup shortening
1 teaspoon vanilla extract
3 tablespoons milk
4 cups powdered sugar

To make cookies combine ingredients with an electric mixer. The dough will be stiff enough to roll into 1-inch balls. Place balls on a silicone mat or parchment paper-lined cookie sheet. Flatten balls to about 1/2-inch thick. Bake cookies in a preheated 325 degrees F. oven for 12 to 14 minutes or until somewhat firm in the center. Remove from oven and cool before frosting.

Make icing by combing all ingredients with an electric mixer until smooth. Add food coloring, if desired. Spread on cookies with a spatula and add sprinkles if you like.

When icing has set store cookies in a tightly sealed plastic container (such as LnL). This will give the cookies their cakey texture after several hours.

Blueberry Loaf Cake     MaryV

 

1/2 cup butter, room temp.

1 cup sugar

1 tsp. vanilla

1 tsp. lemon extract

2 cups AP flour

2 tsp. baking powder

1/4 tsp salt

1/2 cup milk

2 eggs

2 cups fresh blueberries

Grease & flour a 9x5" loaf pan. mix ingredients except blueberries.

Gently fold in blueberries. Bake at 350* for 50-60 min.

1 lb. hamburger fried

1 cup onion

salt and pepper

2 tsp. vinegar

1 tsp. mustard

1/2 cup ketchup

3/4 cup brown sugar

1 can baked beans

1 can kidney beans

1 can lima beans

1 can butter beans

In a lg. bowl, mix ingredients. Bake in 9x13: pan, at 350* oven for 

90 min.

1/4 cup butter

5- ounce can evaporated milk

1 cup peanut butter

7- ounce jar marshmallow cream

 

Mix 1st. 3 ingredients, in pot over med. heat. Stirring constantly until mixture starts boil, a rolling boil. Boil for 6 min. Remove from heat, Stir in P. butter & marshmallow cream pour into a greased 9x13: pan.

Oven Bean Soup                       teachgr3

 

1 lb. mixed beans ( I don't soak mine )

3 quarts water

2 stalks celery, chopped

2 carrots, chopped

1 onion, chopped

8 oz. tomato sauce

1 ham bone

1 lb. ham, chopped

Combine all in a dutch oven, mix well, include spice pkt. from beans. Cover & put in 325* oven for 4 to 4-1/2 hrs. or until beans are done.

300* oven. 2 lg. loaf pans or 5 small

16 oz. can pure pumpkin

1/2 tsp. baking powder

2-1/2 cups sugar

2/3 cup canola oil

4 eggs

3-1/3 cups  AP flour

2 tsp. baking soda, 1/2 tsp. salt, 1 tsp. nutmeg, 1-1/2 tsp. cinnamon, 

2/3 cup milk, 2/3 cup dried cranberries or raisins.

Beat 1st, 3 ingredients with mixer. Beat in eggs, sift all dry

ingredients together, add dry to wet ingredients, with milk.

fold in fruit. Bake at 300* for 1 hr. 15 min. or until test done. 

** If using small pans check at 1 hour. Cool 10 min. before removing from pans. ** Note, Yes it does say 300* oven.**

Taurian's Chicken and Rice

Sorry I did not see you wanted this earlier-----------

2cups buttermilk
6 chicken breasts....( or whatever parts you like)
.......soak over night or at least 4 hours in buttermilk



seasoned flour.......I use Kentucky Kernel from Krogers
shake off excess buttermilk
coat with seasoned flour


heat LARGE skillet (I use my 13")
add 1/4 cup oil and 1/2 stick butter

Brown chicken pieces well ...(if using larger pieces of chicken keep in oven after browning on 400 degrees till gravy is ready)

Leave grease and crumbs in pan and turn heat to just under medium.....

add 6tablespoons regular flour to pan
stir constantly until light brown

slowly add 3 cups warm milk stirring constanly
turn heat down if bubbling too much

add 1 teaspoon Lawerys
add 1 teaspoon pepper
add 1/2 teaspoon garlic salt
add 1 can cream of chicken soup

stir constantly until smooth....If too thick add milk a little at a time to desired thickness...........I keep mine pretty thick to stick to the rice...............
add nice palm full of parsely

return chicken to pan and cover with lid.....keep pan on a just bubbling gravy...Not too high and not too low.........Let simmer for about 20 minutes for breasts(not from oven)
or let simmer for 45 minutes for larger pieces of chicken from oven.................

MAKE RICE..............and eat


Sorry I had to write it like this...I have no written recipe...It is how I make it from my head.........HAHA

Sometimes I will chop some onions in the gravy as I brown the flour...That is so good too...........Serve with Mashed reds or Amish noodles mmmmmmmmmmmm...hope you like it....Peace T56

Lemon Pie

We used to have a local restaurant that featured this pie. It has become my favorite. Well worth the effort if you love lemon!

Scintillating Lemon Pie

Pastry for a 2 crust pie, divided.

Preheat oven - 400 degrees. Roll out 1/2 of the dough into 9-inch circle. Cut into 6 wedges. Place on cookie sheet.


1-1/2 tablespoons sugar
1 teaspoon nutmeg

Mix sugar and nutmeg together in small bowl. Sprinkle over wedges. Bake at 400 degrees for no longer than 5 mintues, or until set. Remove from cooke sheet and set aside.

3 lemons.

Grate yellow part of rind. Peel and slice lemons very thinly. Set aside.


1-1/2 cups sugar
1/3 cup butter
3 Tablespoons flour
3 eggs
1/2 cup water.

Cream sugar, butter and flour. in mixer bowl. Beat in eggs. Beat in water. Stir in reserved lemon slices and grated rind. Roll out remaining pastry to form 9-inch pie shell. Pour lemon mixture into prepared pie shell. Bake at 400 degrees until set-about 40 minutes or until knife inserted in center comes out clean. Arrange baked pastry wedges on top of filling and bake for an additional 5 minutes.


This is a very tart-sweet lemon pie. My brother, who dislikes lemon merigue pie, loves this lemon pie. Very different than the traditional lemon merigue we are accustomed to eating.
