Cookless Wonder Balls (Jan MT)

 

1 each chocolate and butterscotch chips

3/4 cup conf sugar

1/2 cup sour cream 

2 tsp grated orange rind

1/4 tsp salt

2 cups vanilla wafer crumbs

 

Melt the chips in top of double boiler.  Remove from heat.

 

Stir in remaining ingredients.  Chill until firm.

 

Shape by spoonfuls into balls.  Roll in conf sugar.

 

Makes apprx 7 dozen, depending on size.

 

(I think this is one Nightowlz could not copy to this thread.  If I remember right, this was a popular cookie recipe.)

Those look like they would be tasty. Not sure how I would like orange rind with butterscotch, but worth a try.

Cool Lemon & Grape Chicken Salad

2 cups Barilla bow tie pasta, 1-1/2 cups Lemon Yogurt, 1/3 cup

Mayo, 2 tsp. lemon juice, 2 grilled or cooked chicken breasts, cut into strips, 1 cup seedless red grapes cut in half, 1/2 cup sliced red onion, 1/2 cup ce;ery sliced. 

Cook pasta according to box directions. Chill in cold water & drain.

In lg. bowl combine yogurt, mayo, lemon juice, mix well. Stir in chicken, pastam grapes, onions & celery. Chill for several hrs. 

** Can use rotisserie chicken ** I don't recall who posted the recipe, if someone knows please let me know...

Orange Froth (Minneapolis MN)

2 cups milk, divided

2 cups water, divided

1 (12 oz) can frozen orange juice concentrate,

               thawed and divided

2 tsp vanilla, divided

1/2 cup sugar, divided

20 ice cubes, divided

orange slices for garnish

 

 

in a blender, combine half of these ingredients: milk, water, orange juice concentrate, vanilla, sugar and ice cubes.  Blend at high speed for about 30 seconds or until ice cubes are crushed.  Set aside and repeat with remaining ingredients.  Pour into glass and garnish with orange slice.

 

(If it all fits in blender, I would just blend all at once and divide into two glasses.)

Lemon Pie Squares     MamaCarol

Crust: 1 lemon cake mix - 1/4 cup butter soft, 3 egg yolks, 1 cup sweet coconut.

Meringue: 3 egg whites, 1 cup sugar.

Filling : 2 cans lemon pie filling, Heat oven to 350*. In a lg. bowl combine crust ingredients at low speed til crumbly. Press into a 9x13" pan. Bake 10 min. While crust is baking. In a bowl beat egg whites with sugar til stiff peaks. Spread pie filling over baked crust. Spread with merigue over pie filling, sealing edges. Return to oven & bake til golden brown. *Press crust on bottom & up sides of pan. **Sugar can be cut to 1/4 cup for merigue**

Beer Bread                    CandyKisses

 

3 cups sifted self- rising flour - 1/4 cup sugar - 12 ounce bottle of beer ( room Temp.) 1/4 cup melted butter.

Preheat oven to 375* Mix dry ingredients & beer (Batter will be thick & lumpy) Pour into a greased 9x5" loaf pan. Pour butter over top. Bake 1 hr.

The World's Greatest Cookie (Teacup1966 WA)

 

1 cup butter or margarine

1 cup crunchy peanut butter

1 cup sugar

1 cup brown sugar

2 eggs

2 cups flour

1 tsp baking soda 

1 6-oz package semisweet chocolate chips

 

Cream butter and peanut butter.  Gradually add sugars and cream until blended.

 

Add eggs, one at a time, and beat until smooth.

 

Sift together flour and soda and add to creamed mixture.  Stir in chocolate chips.  

Drop from a tsp or cookie scoop onto a greased cookie sheet.  Slightly flatten cookie dough with back of spoon.  

Bake in 325 oven for 15 minutes.  Makes 6 dozen 2" cookies.

Big Moma's Shortening Bread                TTB  Ties That Binds

 

2 cups AP flour - 2 tsp. baking powder - dash of salt - 1 stick of room temp. butter - 1 cup milk warmed up. *take the chill off the milk*- 2 eggs room temp., 1 tsp. vanilla. Cream eggs and butter, add remaining ingredients into a greased& floured 9x5" loaf pan. Bake at 350* for 1 hr.
