@I am appleblossomI'm glad you have the recipe, I also make it with 2 cups shredded zuccinni instead of the bananas, must warn you, this is very dry and crumbly. Probably not what you think it will be. I drizzle honey on mine, and it's good, but not that exciting.

You could add 1/2 cup of applesauce for moisture.

IMO the recipe needs some oil or butter or applesauce as @ECBG posted above.
