Honeydew coconut lime ice pops

                     

                      HONEYDEW COCONUT LIME ICE POPS

 

1 medium-sized honeydew, flesh scooped out and roughly chopped (about 3-3 1/2 cups)

1/2 cup fresh mint

2 tbsp basil

2-3 tsp fresh ginger, finely minced

3 tbsp lime juice

2 tbsp agave syrup
1 cup coconut milk
2 tsp vanilla

 

Blend all ingredients, except coconut milk and vanilla, in high speed blender until smooth. Divide in half. Set aside one half as dark green layer.  Blend remaining half with coconut milk whisked with vanilla.  This is the lighter green layer. 

 

Pour approx. 2 1/2 tbsp dark green layer into each popsicle mold. Freeze until mostly hardened (about 30 minutes). Add additional

2 1/2 tbsp of light green layer to each mold. Freeze until mostly hardened. 

 

If desired, add one final layer of 1/2 tbsp coconut milk/vanilla mixture. 

 

Let harden completely (4-6 hours) and enjoy! Run popsicle mold under warm water for a few seconds to easily release from mold.

@GingerPeach  What a delicious refreshing treat....I'd probably sub the agave syrup but with the 105 degree heat wave I could use a few of these bad boys!

Me too as to the agave syrup, @phoenixbrd  I'm thinking maple syrup instead.

 

Tomorrow I'm going to buy all the ingredients.  I've never made layered popsicles before, but these really tempted me.

@GingerPeach  Yes....that is exactly what I'm using---maple syrup.  I just purchased crenshaw melons and that is what I'm going to use.  Cheers!

I bought all the ingredients but realized I didn't have a popsicle mold and stores near me didn't have one.  I ended up having to order from amazon.

It's expected sometime tomorrow.  My Vitamix awaits its task!

Well, the mold arrived finally yesterday (late) and I ran it through the dishwasher.

 

Today I cut up everything and started the process, but accidentally poured ALL the coconut milk into the mixture, instead of just one cup, so I have nothing left for the white top layer.  Clearly, along with the other small errors I made, I shouldn't be preparing anything today.

 

I can report that the mixture without the coconut milk is very tasty.  (I did use the maple syrup.)  I used only about one teaspoon of ginger but it could have used as much as the recipe called for.

 

I'll try again later when I'm in a mood to do this again.

@GingerPeach I went to TJMax to purchase popsicle molds.  I bought a box and I'm making this afternoon.....results tomorrow,  Gurl.., these are epic for all the hoops we are jumpin' through!  And don't be concerned a "white layer", that is one of the things I love about plant based foods....you just can't mess up.

Next time I'm buying already cut-up melon pieces!

 

They are very tasty, so I will make them again, but with short-cuts, @phoenixbrd!
