I was in the mood for soup ... and had four leftover meatballs.
Fried up the half onion left over from yesterday, some garlic. Added four cups of water and two packages of Lipton onion soup mix with muchrooms, box of frozen mixed vegetables, the meatballs and about 3/4 cup of Israeli couscous.
I let it simmer for about 1/2 an hour .... Delicious!

That's such a fun way to make soup. I almost always just make it without a recipe. I use what I need to use up and throw in other things I happen to have on hand. It usually us really good. The only problem is that if it turns out really great, you may not be able to replicate it.
