Charleston discovered this recipe was missing the flour. Based on the amount of leavening given, I did some research and came up with 1/2 cup of all purpose flour. I made them last night and they were a hit. The next time I make them, I plan on sprinkling the tops of the muffins with toasted chopped walnuts or pecan.

I don't think muffins are a hallmark for the Rangemate:microwaves will not brown baked goods such as muffins or cake, but these muffins were flavorful and moist. I'm looking forward to trying the oatmeal bars.

Thanks for posting the flour missing in the Zucchini Feta Muffins . I had put a lot of the RangeMate recipes on the forum for people not able to find what they were looking for. I had never made these muffins and appreciate CharlieDog letting us know the typo in the recipe.

As a P.S., I made a double batch of these. I stored them in the fridge, and I have to say, they are crazy delicious cold:they taste like pound cake!
