These ribs are prepared in a different way that I found interesting. They are ribs that Oprah got excited about so you know they are very good!
Quincy Jones' Thriller Ribs
2 tsp. Spike seasoning
1 tsp. Accent seasoning
1/2 tsp. freshly ground black pepper
5 racks baby-back pork ribs (about 5 #)
6 cloves garlic, minced
2 large jalepeno peppers, minced
2 large onions, halved and thinly sliced
2 green bell peppers, thinly sliced
2 red bell peppers, thinly sliced
2 yellow bell peppers, thinly sliced
1.) In a cup combine Accent and Spike seasonings and black pepper.
2.) Sprinkle 1/4 tsp. seasoning mixture on each side of the rib racks.
3.) In a small bowl, combine the mixed garlic, jalepeno peppers, and remaining seasoning mixture.
4.) Rub the garlic mixture on the top and bottom of the ribs.
5.) Line a large roasting pan (17x11.5") with enough foil to wrap all of the ribs.
6.) Spread a layer of onions and bell peppers on top of foil.
7.) Place 2 rib racks side by side, on the vegetables.
8.) Continue to layer the onions, peppers and the ribs.
9.) Tightly wrap the marinated ribs in the foil and refrigerate for 2 days.
10.) Remove the pan from the refrigerator and let sit at room temperature for 30 minutes.
11.) Preheat oven to 400 degrees.
12.) Before placing the ribs in oven, reduce temperature of oven to 300 degrees.
13.) Bake foil wrapped ribs for 6-8 hours. Make sure ribs are wrapped tightly in foil - maybe even double wrapped. (I wrapped in foil, put into a disposable foil pan and then into a stainless steel pan and cooked for 8 hours).
14.) Remove ribs very carefully.
15.) Spoon off the fat from the liquid in the pan and discard the fat, reserving pan juices.
16.) Cut each rack into 3 sections and serve with the vegetables and pan juices.
17.) NOTE: Spike is a special blend of 38 herbs, vegetables and exotic spices, combined with a bit of salt.
Make 1 to 1-1/2 racks of ribs per person. Yummy!
No BBQ sauce is used but only the meat juices. The ribs will not be dry!.
