I originally started with one of Lizzy Early's recipes, and took it from there - every variation I made was hugely popular. The recipe will make about 20 donuts using a donut baking pan (less if you make them "plump"), and you'll have some cake mix left over. If you bake a lot, as I do, save the leftover mix in a marked jar; if you add 6 Tbs. to the "new" size cake mix, you can use your old size cake mix recipes. (You can add yellow or white to chocolate mix, and the yellow and white are pretty much interchangeable.)
The pans are available on Amazon for $7.50, and they also have mini sized ones.
BAKED DONUTS
2 3/4 cups of cake mix - flavor of your choice
2 eggs
3/4 cup of buttermilk
2 Tbs. butter, melted
1 tsp. extract (vanilla, or other flavors if you prefer - almond is good with white or yellow)
Preheat oven to 450° and use baking spray in the donut pans. (I have two; these bake up fast, so I just dump the pans just a couple of minutes out of the oven then refill and put them right back in again.)
Combine all ingredients in a large bowl until smooth.
Pipe batter into the donut pans, filling about 2/3 full. (I use a disposable pastry bag for this - it's quick and easy. If you use a star tip you'll get a pretty sort of swirled effect on your donuts that holds up well.)
Bake for 7-9 minutes, cool in pan for a couple of minutes, then turn out onto a cooling rack.
Dip into your favorite glaze and decorate; you can also dip them into melted butter and then a sugar-cinnamon mixture, or shake them in a bag with powdered sugar.
I usually make my own glaze, but if you're in a hurry (or want to "match" a cake mix), just heat ready-made frosting until it's almost a liquid. (I do top of the stove over low heat, but you can use a microwave.) Dip the top of the donuts in it, and let the glaze "set" in the refrigerator for a short time.
This was devil's food cake mix with a chocolate glaze:

On these I used the red, white, and blue "Funfetti" cake mix and a vanilla glaze:

I think I'm going to use the key lime cake mix and frosting on my next batch...or maybe the orange! ![]()

I've never heard of a donut pan....if I want to buy one is it really called a 'donut' pan?

But twocent, they're baked, not fried, so they're "almost" diet donuts!

I bought the donut pan a while ago and tried Ina's recipe and they were sort of flat. I may try this recipe == looks interesting.
