NATIONAL FROZEN YOGURT DAY

National Frozen Yogurt Day on February 6th recognizes a sweet frozen dessert that has gone from fad status to staple freezer item in a few decades. 

 

Frozen yogurt sales are increasing every year as people want a healthier alternative to ice cream. The explosion of flavors and topping choices add to the popularity of frozen yogurt.

H.P Hood developed the first frozen yogurt in 1970 in the United States. It was created as a soft-serve treat called Frogurt. Not long afterward, Humphreys and Dannon released their own versions of frozen yogurt.

It's popularity grew in the 80s, mostly due to frozen yogurts "health food" status. Ice cream manufacturers soon caught on, offering low-fat options.

Frozen yogurt is again making a comeback as consumers have begun to prefer the tart taste of yogurt. Not only does it find its way into home freezers, but it also is a sweet stop after work or play.

Q. How many calories are in frozen yogurt?

A. A 1/2 cup of frozen vanilla yogurt contains approximately 117 calories

Q. Is frozen yogurt healthier than ice cream?

A. Though benefits vary from product to product, frozen yogurt does tend to be lower in fat and calories than ice cream.

Homemade Frozen Yogurt

(Easy, Cheater Version)

This frozen yogurt is made without an ice cream maker. It's easy to make, creamy, and delicious.

Prep Time: 10 minutes 

Rest time: 2 hours 45 minutes

Total Time: 2 hours 55 minutes 

Servings: 4 servings

Ingredients:

• 2 cups Greek yogurt plain, full fat
• ¼ cup honey
• 1 tablespoon pure vanilla extract

Instructions:

• Place the yogurt, honey, and vanilla in your food processor’s bowl or in a medium mixing bowl.
• Process the ingredients to incorporate, stopping once to scrape the sides of the bowl, then process for 1 more minute until light and fluffy. If mixing by hand, mix for 2-3 minutes until smooth and fluffy.
• Using a spatula, transfer the mixture to a square 9-inch glass or ceramic baking dish. Cover with cling wrap and freeze for 45 minutes.
• Remove the pan from the freezer. Use a rubber spatula to stir the already-frozen edges into the still-soft center, then spread evenly again.
• Cover again, and place in the freezer for 2 more hours, repeating the process of stirring the yogurt every 30 minutes.
• When the entire mixture is frozen, serve immediately as a soft-serve yogurt (use chilled bowls), or freeze it for 1-2 more hours for a firmer consistency that you can scoop out with an ice cream scoop.

Notes:

• To keep this yogurt low-carb, you can use a sugar-free sweetener. 
• You can keep this yogurt in a sealed container in the freezer for up to a month. But the longer it stays in the freezer, the less creamy and icier it will become. If it's spent longer than a day in your freezer, remove it from the freezer about 30 minutes before enjoying it.

Caprese Phyllo Cups With Hearts

A delicious mixture of tomato, garlic, fresh basil in a phyllo cup then topped with a mozzarella heart and drizzled ever so lightly with reduced balsamic vinegar

Prep Time: 15 minutes 

Servings: 16

Equipment:

• 1 Small Heart Shaped Cookie Cutter

 

Ingredients:

• 1 Pint Cherry Tomatoes diced small
• 1/2 Bunch Fresh Basil - minced
• 2-3 Cloves Minced Garlic
• 1/4 teaspoon Dried Basil, Oregano and a sprinkle of garlic powder
• Salt and Pepper to taste
• 1 Package Phyllo Cups Or Bruchetta Toasts or toasted sliced italian bread
• 2 Tablespoons Olive Oil
• 1 Bottle Reduced Balsamic Vinegar
• 1 Log Pre-Sliced Fresh Mozzarella Cheese Found by the specialty cheeses in your produce section - if you can't find sliced just buy the medium balls which are called bocconcini or whatever size is appropriate for your cookie cutter and slice them yourself

Instructions:

• Cut your fresh mozzarella in heart shapes and set aside
• Take phyllo cups out of freezer to thaw
• Finely dice tomatoes, basil, garlic and toss with OO and spices
• Fill each cup with tomato mixture which is about a teaspoon and top with a cheese heart
• By waving your hand above the prepared cups lightly drizzle the balsamic back and forth to make pretty stripes across your cups
