Raspberry Fool is a quick and easy raspberry dessert recipe. It’s essentially raspberries and cream that’s been swirled together to make an elegant treat!
 
Prep Time: 15 minutes 
Total Time: 15 minutes 
 
Servings: 6
 

Ingredients:

 

  • 2 cups Driscoll's raspberries 12 ounce package
  • 2 tablespoons granulated sugar
  • 2 cups whipping cream
  • ÂĽ cup confectioners sugar powdered sugar
  • 1 teaspoon vanilla extract*

Instructions:

 

  • Puree 1 ½ cups of the Driscoll's raspberries in a food processor or blender with the 2 tablespoons of granulated sugar.
  • In a large bowl, add the cream, confectioners sugar and vanilla extract. Mix with an electric hand mixer or whisk by hand until stiff peaks form.
  • With a rubber spatula, gently fold in Âľ of the pureed raspberries into the whipped cream mixture, leaving visible swirls. Gently fold in the rest of the puree but be careful not to overmix. Spoon the fool into 4-6 glass cups or small bowls. Top with additional raspberries and serve.

Notes:

 

*I added vanilla to this batch of cream, but I thought about giving almond extract, a tablespoon of brandy, or even orange-flavored liquer a try.

@ChiliPepper This delicious looking dish reminds me of a an easy to prepare and refreshing strawberry one you posted several months ago that I made, so I am DEFINITELY going to make this one!🥰 I had to alter it a bit and it did not resemble the photo, but everyone enjoyed it! You can NEVER go wrong with berries and cream!❤️

I saved a very fancy Slatkin candle jar that for once, doesn't have his name all over it.

 

I want to do 'something' with a light Thanksgiving/Fall theme for a center piece for one of my additional tables.

 

Something elegant.....

 

The only thing is...I have zero talent and NO creativity.  All I can do really is buy a foam thing and stuff faux flowers in it...and not very pretty.

 

If you have any ideas, or pictures....I'd love any thoughts you or anyone else may have!!!

On August 9, many enjoy their favorite dish on National Rice Pudding Day. We recommend celebrating today's food holiday by eating this delicious pudding. Use the opportunity to give it a taste if you've never tried it before! 

 

A variety of recipes exist for rice pudding. All of them include cooked rice as the base ingredient and combine a milk (such as cow's, coconut, evaporated, or cream) with bread. DH LOVES rice pudding!

 

I haven't made it since I tried it in the IP and it oozed everywhere!  What a mess!

 

I used to use the Old Betty Crocker cookbook baked recipe.
