It's been fun watching my garden grow. It's just getting going around here so no harvest in sight.

 

It's supposed to cool off somewhat this weekend so I'm thinking of trying pork carnitas in the Crockpot.


I also have 4 bags of Brussel sprouts in the freezer so I need to get at those too.

This used to be my most hated veggie ever.  I still only love them roasted or deep fried.   We usually opt for roasted since we rarely fry.  Toss halved or quartered (depending on size) and toss with EVOO.  Salt and pepper to taste; roast in the oven then immediately drizzle with more EVOO and salt, pepper, capers, fresh parm shavings, and a generous squeeze of fresh lemon over all.  Could be my meal itself.

Ingredients

  • 12 ice cream sandwiches
  • chocolate syrup (I like to use to magic shell)
  • Caramel syrup (I normally use Magic shell)
  • (1) 8 oz container of cool whip (or you can use homemade whipped cream)

Instructions

  • Remove the wrappers from all the ice cream sandwiches. You need to move fast because ice cream melts. Smiley Wink
  • Lay 3 ice cream sandwiches side by side on a cake platter.
  • Drizzle with the caramel and the chocolate.
  • Lay another 3 ice cream sandwiches on top going the the other direction.
  • Drizzle with more caramel and chocolate.
  • Do this 2 more times so it is four high.
  • If the ice cream sandwiches are melting, then place in the freezer for 30 minutes to an hour.
  • "Ice" the cake with cool whip.
  • Then drizzle the caramel and the chocolate on top allowing it to drip down the sides.
  • Freeze for at least 2 hours before cutting and serving.

Notes

You can make this recipe to be as big or small as you want. That means you can make it for any fun occasion or holiday.

HEY!

 

That is MY famous ice cream cake!   LOL

 

Now my family will know I did not invent it!

 

I've been making this for years, but not like pictured.

 

Just in a 9x13 Tupperware with everything layered.

 

I will use any favorite chopped candy/choco chips in the layers too.

 

BUT I use Hot Fudge, not choco sauce.

 

Much better!

 

SO Easy!!

I know some of your family members don't like nuts but if I were making it for me, I would add chopped nuts in there somewhere 'cause I like nuts in most things!

4th of July Salad

 
This fresh and delicious patriotic salad combines strawberries, blueberries and mozzarella cheese for a red, white and blue side dish perfect for Memorial Day and the 4th of July! Topped with toasted pine nuts, fresh basil and balsamic vinaigrette this Caprese inspired salad is sure to wow your friends and family

EQUIPMENT

 
  • Cutting board and knife
  • small skillet
  • mason jar with lid (optional, to mix the dressing)
  • serving bowl

INGREDIENTS

 

  

For the Balsamic Maple Dressing

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar, good quality
  • 1 clove garlic, crushed
  • 2 tbsp pure maple syrup
  • 1/2 tsp dried thyme
  • pinch of salt & pepper

For the Salad

  • 8 cups lettuce, mix of spinach and butter lettuce feel free to use a your favorite lettuce or salad mix
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, quartered
  • 8 oz fresh mozzarella, sliced and cut (or hand torn) into 1 inch pieces you can substitute mini mozzarella balls if preferred
  • 4 tbsp pine nuts
  • 1/4 cup fresh basil, thinly sliced

INSTRUCTIONS

 

 

Toast the pine nuts

  • Heat a skillet over medium heat. Do not add oil or cooking fat.
     
    Add pine nuts to the skillet and cook on medium heat for 2-3 minutes until lightly toasted, shaking constantly so they do not burn.
     
    Remove from the heat and allow to cool completely before adding to the salad.
     
    *Note* If the pine nuts burn they will taste very bitter in the salad so watch them closely.

Make the Maple Balsamic Vinaigrette

  • Combine all ingredients in a mason jar or other jar with lid.
     
    Screw the lid on tight and shake the dressing until well combined. Set aside.

Assemble the 4th of July Salad and serve

  • Add lettuce to a serving bowl.
     
    Arrange blueberries and strawberries evenly over the top. Then add mozzarella pieces.
     
    Sprinkle with slivers of fresh basil and (cooled) toasted pine nuts.
     
    Serve with Maple Balsamic Vinaigrette or your favorite balsamic dressing. Enjoy!

NOTES

 
This recipe can easily be doubled or even cut in half to suit your needs.
