Roasted Red Pepper Deviled Eggs
Serve these devilishly tasty treats as part of a Halloween feast. Roasted red peppers and paprika give the filling an orange hue reminiscent of jack-o-lanterns, while snipped chives resemble their stems.
Time Prep: 25 Minutes Cook: 18 Minutes
Ingredients:
8 large eggs 1/4 cup drained and chopped
jarred roasted red peppers
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon paprika, plus more for sprinkling
Salt and pepper
3 chives, cut into 16 1/2-inch pieces
Preparation:
1. Bring a large pot of water to a boil over high heat. Gently lower eggs into water, return to a boil and reduce heat to a low simmer. Cook eggs 11 minutes, drain and place in a large bowl of ice water. Cool completely, at least 10 minutes.
2. Crack eggs and carefully peel under cool running water. Slice in half lengthwise, scoop out yolks and place them in a food processor with peppers, mayonnaise, mustard and paprika. Cover and refrigerate whites. Process yolk mixture until smooth; taste and season with salt and pepper.
3. Transfer yolk mixture to a pastry bag fitted with a large round tip or a large ziplock bag. If using a bag, squeeze out air, seal and snip off a corner. Pipe about 1 Tbsp. filling into center of each egg white, to resemble a pumpkin.
4. Set a piece of chive diagonally into filling to resemble a stem. Sprinkle yolks with paprika.
5. Serve immediately or cover and refrigerate for up to a day.

When DH went to the store, I had 2 small cans of pumpkin on the list. He came home with 3 jumbo cans!

The chili won...it was delicious. Well deserved the win.
The pumpkin humus was amazing...I am going to get the recipe...I'll share it with you all once I have a copy of it.

Ok, so I was thinking everyone except Respect & I might enjoy this dip.
Cauldron Full of Devilish Dip
Fill a bread bowl with a chunky Devilish Dip to create the look of a creepy bubbling cauldron.
Ingredients:
3 ripe avocados
2 plum tomatoes, seeded and chopped
2 tablespoons chopped red onion
1/4 cup fresh lime juice
1/4 teaspoon hot sauce
Salt
1 small round pumpernickel bread (1 lb.)
1 (8 oz.) bag pretzel rods
1 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 orange bell pepper, seeded and cut into strips
Preparation:
Halve and pit avocados. Mash flesh with a fork.
Stir in tomatoes, onion, lime juice, hot sauce and salt to taste.
Cover with plastic wrap touching dip; refrigerate for up to 3 hours.
Cut a half inch from top of bread and an inch from bottom. Scoop out most of soft interior, leaving 1/2 -inch-thick sides.
Arrange pretzels and peppers to resemble logs and flames on a platter.
Fill bread with dip; place on top. Serve immediately.

I would love to have events like that in our office...I would ALWAYS be the winner...since I am the only one usually IN the office! LOL

We used to do potlucks once per month but as older employees left and new ones came in they are less interested in these kinds of events. We are now down to 2 potlucks per year....and we also have a couple office outings each year where we all go someplace and do something fun and physical (paid by our employer) ...we all went bowling last time.
