@mustang66lady, Have you had some improvement with your leg?

@tiny 2

The swelling has gone down but I think that is due to a change in my BP med.   I still have antibiotic to take so will see how it is when I am done.   Not sure what else my Dr.  has in his bag of tricks.

How is your DH?   Have you had to add the extra concentrator yet?   Have had you both in my prayers.  Heart

@mustang66lady, Yes, They got the outlets in and I have him on both now. Woman Sad.

@tiny 2  my friend, I so wish there was something I could do to help or make this better . . . Heart

Oh bless you @tiny 2  as that is the very best thing to do.  I so hope the additional concentrator gives DH more comfort and that your appointment goes well today after your early morning snoozle (I took one yesterday, woke up to see Geoffrey Zakarian's 11" square pan on the air and of course bought it as it will fit in my toaster oven plus who am I to argue with $8 a month and I was rewarded with a couple of bone in chicken breasts marked down so I am going to stuff one when the pan arrives.  Should make some good gravy!).

Take care my friend and be well . . . Heart

Thought I'd share the story of what I fixed myself for dinner last night.  So easy  it was like falling off a log backwards..

DH was out of town for the weekend, so I made something I knew I would probably like, but him not so much, because he likes but doesn't love Asian flavors and likes his veggies separate from meat.  I like them all mixed up.

I had a bag of frozen stir-fry veggies ( containing broccoli, various types of peppers, some Chinese-style noodles, and other stuff) and  some chopped white meat from a  store-bought rotisserie chicken.

Per veggie  package instructions, I lightly oiled a heated stainless steel wok-shaped pan and threw in the vegetables and shortly after that, added  the chicken.

After about two minutes of sauteeing, I added some  stir-fry Szechuan Spicy Sauce (brand name Tsang) and stirred around in the hot pan for about another two minutes.

Very good eating.  Too easy.  Nice one-pan dinner.  Ate the leftovers just now for lunch.

DH can go out of town more often, as far as my menu preferences are concerned.  LOL!!

What a coincidence @novamc1

I did Cashew Chix Stir Fry!  Well, dutch oven fry as I don't have a wok.

Haven't had Asian flavors in a while and really enjoyed it!  I recently saw a recipe that used honey.  I have never added it b4 but it was delish....thickened up the soy nicely.

@momtochloe made me make it!  Good Choice!

You mentioned egg rolls--yum!!

I like the Chung brand that can be found in the freezers of many grocery stores.

Haven't bought them for a while, but will get them anytime a box of four goes on sale.

I like the chicken type, but have also tried the pork and all-vegetable varieties.  Very good.

For me, two of those egg rolls are a meal in themselves.

This easy 5-minute stir-fry  can be just as good using Asian sweet chili sauce.  I have some Kikkoman-brand  chili sauce on hand, but just about any type of interesting Asian sauce will probably work well.

Ok I need to get caught up on what is going on here this morning but for those of you at home right now, turn on the Food NetWork-the Pioneer Woman is in the renovated new Brady House and is going to cook there.  She is making a Very Brady Dinner.   Too funny!

We have a couple more days of really hot weather predicted for this week, Then we are to get a cool off for a few days.  It has been the summer of tacos for us-seems like cooking a lot just isn't appealing and neither has eating full meals.  I have gotten some interesting tacos ideas that we have tried, repeated many of them and today, I got a recipe from Eddie Jackson when he visited The Kitchen, for General Tso's Tacos.  I wasn't too impressed when announced but as he made them, they sure looked good.  Everyone seemed to really enjoy them but then again, I have never heard them say they didn't like anything.  Well maybe one time Jeff Mauro said he wasn't a fan of a particular food-not that the recipe was bad, he just didn't care for the food itself no matter how it is fixed.  Can't remember now what that was.

@novamc1  I FINALLY FOUND THEM!  Our Meijer carries them (found them on the way to looking for something else).  Will watch sales as I would love to try them!

Hee @mustang66lady  that's like Guy Fieri with eggs!  I have seen him happily bite into things that I would be sprinting away from but show him an egg in any form and you can just see the gag reflex kick in poor guy.
