@ChiliPepper good question . . . when I made it I used Veganaise which is virtually identical (according to taste tests) to Hellman's.  Next time I make it, I'm going to go with that.

I got this fab recipe here on RS from DiAnne a long time ago.  I have served it over rice, pasta, chicken...you name it.

 

Most recently I added corn and served it over salad.  Add a ring of cukes and toms!

 

CHIPOTLE-MAPLE BLACK BEANS

This is ridiculously fast and easy if you need to make a last minute side dish for a barbecue. I have used it to "stretch" when I have had unexpected guests.

1 cup onion, diced
1 T vegetable oil
1 t garlic, minced
2 T apple cider vinegar
2 cans black beans, rinsed and drained (about 15 oz each)
1/2 cup maple syrup
1/2 cup ketchup
2 T minced chipotle chiles in adobo
1 t dry mustard
1 t Worcestershire sauce
Salt to taste

 

Saute onion in oil over medium heat until softened. Stir in garlic and cook 1 minute.

Deglaze with vinegar and bring to a boil. Add reminaing ingredients and simmer 10 minutes.

@RespectLife thank you so much for this, I am definitely going to try it this weekend with a can of black beans and a can of corn.

 

Just real quick, do you think a slice of bacon or two would be of benefit to this dish?  I don't want to mess with something that looks so delicious but for some reason I think a bit of bacon would be an interesting addition . . . Smiley Happy
