  Bourbon Pecan Pralines

 

Bourbon Pecan Pralines

 

TOTAL TIME: Prep: 15 min. Cook: 25 min. + standing YIELD: 1 pound (about 16 pralines)
 
Like authentic pecan pralines found in New Orleans, these treats are sweet, crunchy and rich! —Taste of Home Test Kitchen
 

Ingredients

  • 1/4 cup butter, cubed
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup heavy whipping cream
  • 1 cup pecan halves, toasted
  • 1/2 cup chopped pecans, toasted
  • 1 tablespoon bourbon

Directions

  • 1. Grease 2 baking sheets; set aside. In a large heavy saucepan over medium heat, melt butter. Stir in sugars, then the cream; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes.
  • 2. Remove from the heat; stir in the pecan halves, chopped pecans and bourbon. Immediately drop by tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Store in an airtight container.

I look forward to the taste of pumpkin every Thanksgiving. This easy pumpkin fudge recipe lets me do that and everyone loves it.—Marlene Fudge, Rushville, Indiana
 

Ingredients

  • 1 tablespoon plus 3/4 cup butter, divided
  • 2 cups sugar
  • 3/4 cup packed brown sugar
  • 2/3 cup evaporated milk
  • 1/2 cup canned pumpkin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground nutmeg
  • 1 package (10 ounces) cinnamon baking chips
  • 1 jar (7 ounces) marshmallow creme
  • 1 cup chopped pecans, divided
  • 1 teaspoon vanilla extract

Directions

  • 1. Line a 13-in. x 9-in. pan with foil and grease the foil with 1 tablespoon butter; set aside. Cube the remaining butter and place in a large saucepan; add the sugars, milk, pumpkin, cinnamon, pumpkin pie spice and nutmeg.
  • 2. Bring to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir until a candy thermometer reads 238° (soft-ball stage).
  • 3. Remove from the heat. Stir in cinnamon chips until melted. Stir in the marshmallow creme, 2/3 cup pecans and vanilla. Transfer to prepared pan. Sprinkle with remaining 1/3 cup pecans. Chill until firm.
  • 4. Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

Harvey Wallbanger recipe

 

Classic Harvey Wallbanger

 

    • Prep Time: 2 minutes
 
    • Cook Time: 0 minutes
 
  • Yield: 1 drink 

Want a twist on the Screwdriver? Try the Harvey Wallbanger, a recipe for its more sophisticated cousin drink.

Ingredients

 
  • 2 ounces (1/4 cup) vodka
  • 3 ounces (6 tablespoons) orange juice (fresh squeezed, if possible)
  • 3/4 ounce (1 1/2 tablespoons) Galliano liqueur (Galliano L’Autentico)
  • Ice, for serving 
  • For the garnish: Orange wedge, cocktail cherry (optional)

Instructions

  1. Add the vodka and orange juice to a glass with ice and stir a few times until cold. 
  2.  Pour the Galliano over the back of a spoon onto the drink. Garnish and  serve.
