Easy Old Fashioned Hermit Cookies

 
PREP TIME: 15 mins
COOK TIME: 12 mins
SERVINGS: 48
 
 
 

INGREDIENTS

 

  • 1/2 cup butter room temperature
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp allspice
  • 1/8 tsp nutmeg
  • 1 cup raisins
  • 1 cup chopped dates
  • 1 cup coarsely chopped walnuts or pecans

INSTRUCTIONS

 

 

  • Preheat oven to 350 F.
  • In a standing mixer on medium speed, cream together butter and brown sugar. Add eggs and beat until mixture is pale and thick - about 2 minutes. Beat in vanilla.
  • Reduce mixer speed to low and beat in flour, baking soda, salt, cinnamon, allspice and nutmeg. Incorporate raisins, dates and nuts (depending on your mixer, you may have to do this part by hand with a wooden spoon).
  • Drop cookies by tablespoonfuls onto a well-greased or parchment-lined baking sheet, about 2 inches apart (you will have to do batches). Bake 10-12 minutes, until edges are set but centres still appear moist. Cool on baking sheet 2 minutes, then transfer to wire racks to cool completely.

NOTES

 
PREP THE PANS: Because they haven't got a lot of butter, it's really important to prep your baking sheets or they will stick - parchment paper is ideal: easiest removal, practically no cleanup, no need for extra fat. Otherwise, just grease 'em well
 
HOW TO STORE: Keep Hermit Cookies in an airtight container (up to 10 days) or freeze on a flat surface then transfer to freezer bags to store up to 3 months. Thaw at room temperature for 15 minutes before serving.
 
PRO TIP: Toast the nuts for a bit in the preheating oven for even more amazing flavour.

I have had this recipe since 2016 and finally tried it!  It is so good....I did make some changes....I used a couple drops of Anise extract, but could have used more.  I was afraid of 2 TBLS though~~didn't drain the toms and used chix broth instead of veg.

I didn't have a block of Feta, just used Wegman's crumbled...I bet even blue cheese would be good.  We loved it!!

 

Shrimp Saganaki

 

Saganaki, a traditional Greek preparation named after the pan in which it’s prepared, is best served straight from the skillet, with plenty of toasted bread for scooping up the savory tomato sauce. If you can find them, wild American shrimp and high-quality Greek feta really make this dish special.

Ingredients                                                           Servings: 4 

  • 1 tablespoon olive oil
  • 4 scallions, white part only, minced
  • 2 cloves garlic, chopped
  • 1 cup drained diced canned tomatoes
  • ½ cup dry white wine
  •  cup vegetable broth
  • 2 tablespoons ouzo or other unsweetened anise-flavored liqueur
  • 1 teaspoon chopped flat-leaf parsley plus more for garnish
  • 1 teaspoon chopped fresh dill plus more for garnish
  • pinch of dried oregano, preferably Greek
  • Kosher salt and freshly ground black pepper
  • 12 medium shrimp (about ½ lb.), peeled, deveined (head on if desired)
  • 1 4-oz. block feta
  • slices of country-style white bread, toasted
  • Heat oil in a medium heavy skillet over medium-low heat. Add scallions and garlic; cook, stirring often, until soft, about 3 minutes. Add tomatoes and cook, stirring occasionally, until reduced by half, 4–6 minutes. Remove from heat; add wine, broth, ouzo, 1 tsp. parsley, 1 tsp. dill, and oregano. Season with salt and pepper. Cook over medium-high heat, stirring often, until tomato mixture is reduced by one-third, about 5 minutes.
  • Reduce heat to medium. Season shrimp with salt and pepper. Add shrimp to skillet, arranging around edges. Place block of feta in center of skillet. Cover and simmer until shrimp are cooked through and feta is warm, 4–6 minutes.
  • Remove skillet from heat. Transfer shrimp and feta to a large shallow bowl, if desired. Garnish with parsley and dill. Serve with toast alongside.
