Spread 1 heaping tablespoon of cheese spread on each toast.

I never have put cream cheese in mine. I bet that makes it nice and creamy.
DH loves Pimento Cheese, so I am sure he will tell me to thank you once he tries a batch of your recipe.
I definitely will make some over the next few days. Thanks so much for sharing this recipe.

I like the idea of including Monterey Jack cheese with cheddar, because I've always thought some pimiento cheese spreads are too heavy on sharp cheddar taste.

It's hard to tell how many because I couldn't feel those. He gave me an extra shot on the side vs what he gave me on my neck. I felt every single stitch going in on my neck. LOL He said he always does a lot of stitches because then there won't be any tearing. He said the reason people's wounds open up is because they do too few stitches.
I had to order these mepiform silicone patches from Amazon. They say they work very well for limiting scarring. The skin on my side is already scarred from several infections, so I don't think it will matter, but I'll try it anyway as I need it for my neck as well.
This should be the end of the infections. I was getting tired of having to deal with that about once a year.
So on this thankful Thursday I am thankful for goog doctors.

I am sorry to hear that you are "ailin'". Pain can be so draining.
Mr. Writer and I have found that Curamin (Curcummin, a GREAT anti-imflamatory)

really zaps pain for us without making us sleepy. We get it at the health food store or Whole Foods. It works for sore muscles after doing yard work we do not do on a regular basis. I was given a prescription for a pain reliever by my doctor after I had a benign cyst removed a couple of years ago. Since the pain medicine she prescribed previously made me too sedated, I decided to try the Curamin instead. One dose was all I needed.
I am not a doctor and I cannot prescribe for anyone, so again, check with your doctor if you feel so inclined.

On this Thankful Thursday, I am thankful to have my house cleaned! I am tired and I hurt but it's done.
@novamc1 provided both her recipe, and the link for Paula Deen's recipe for pimento cheese. My recipe is very close to Novamc's though and it does have cream cheese in it. Mine is just a bit more embellished! We have been having fun spreading it on crackers, warming it in the microwave and using it as a warm dip, and I think a toasted pimento cheese sandwich sounds wonderful-I saw Damaris Phillips make one and that is kind of what started the pimento cheese craze here.
Here is my recipe;
8 ounces of sharp cheddar cheese-I buy the block and shred myself
8 ounces of softened cream cheese ( I use low fat but not fat free)
1/2 cup mayonnaise (DH will only eat Dukes)
4 ounces drained, chopped pimentos
approx. 2 Tablespoons chopped pickled jalapeno peppers but could use fresh
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
I place the softened cream cheese in my Kitchenaid mixer bowl, turn on the mixer and let the mixer smooth out the cream cheese. Then add the mayo and spices and blend well together. Then stir in the pimentos and jalapenos and mix well. Finally stir in the shredded cheese and combine well. I store it in a Lock N Lock bowl and chill overnight if I can keep DH and DD out of it that long!

I'm sorry you are having to go thru this; like the rest of the Kitchenettes, wish we were closer so we could help get you over the hump.
If your doctor's office never returned your call, then you should call his answering service. You have a legitimate question and it deserves an answer. You have (or your insurance will) paid for a service and it isn't over until you are satisfied. A good doctor would not want you to be in pain. Call now, before it is too late. You should receive a call back from him (or his covering doctor) within 1/2 an hour. If not, call again. Anyone can incorrectly write down a phone number. If the doctor doesn't receive the correct number from the service, there is no way he can return your call. A 1/2 to an hour is long enough to wait for a return call after office hours.
