I was thinking of you this weekend as I did a bit of 'pumkinning' myself.
I made Pumpkin Risotto...David's recipe from the Insider Mag.
Meh. I dunno...pumpkin with parm cheese just tasted odd to me! I love every other risotto I have made...but this...maybe one and done. Pumpkin and sage are good together...but it just hit me odd mixed with parm. in risotto.
So, I am not sure I would like pumpkin shells w/ ricotta afterall....maybe I just like my pumpkin in sweet things! Like PIES AND CAKES AND CHEESECAKES.....
I also made pumpkin bisquits. I wasn't paying attention and patted the dough a little too thin so actually, I made Pumpkin Pucks. LOL
I found a similar Pumpkin Bisquit recipe to the one I used...but it had 3 T of Honey which would have been a much welcomed ingredient!
Tasty but I much prefer Meredith's Btrmilk Bisquits.
I also made the Chicken Zoodle Soup again! Hugs for that one, my friend!
It is quickly becoming one of my fav soups...so light and healthy!
I wish I wasn't out of gardening time and zucchinis!
This batch I put in some Seasme Oil and Asian Spices..so it was like Pot Sticker Soup minus the carbs of the the Stickers! LOL

The addition of the Asian spices and the Sesame Oil sound like a wonderful twist on chicken soup. Would one of you ladies be willing to share that recipe? Thanks!

I forgot about that one!!! I printed it but it was too hot to "Think Soup" at the time.
I don't have a spiralizer (I know - right) but I think slices or chunks might work don't you?
