Oh Respect, that is great news! I am glad things are coming together for Mom & you. So nice of Hubby to help you with all this.

It will take some getting used to for her but you will work & rest easier knowing there is always someone there if she needs them.

Sounds like you are doing a wonderful job.

Don't forget to take care of yourself too! (((hugs)))

Dear RespectLife and Mustang66Lady,

How good it was to hear from you both and to get the positive updates. You ladies have definitely been in our prayers.

We dodged the weather bullet three days in a row with no damage to us or our house, thank the Lord. Last night here were about 12 tornadoes south of us but they mainly touched down out in the country with minimal damage. Amazingly, no one was hurt. There has been quite a bit of flooding in some areas, though.

There is a slight chance of severe weather tonight again, but it looks like it will be limited to lightning, strong rain, and possibly small hail--if that. After that storm passes through, there will be about seven days of uninterrupted sunshine. I' am so ready for that.

Have a good evening and enjoy your dinner. I am making a pot roast with onions, mushrooms, and carrots cooking in the same pot. I just put some baking potatoes in the oven to serve with it. (Num, num and not too much clean up. Definitely my kind of meal.)

We are all so happy to hear from you and the news that you shared. It is difficult to make the decisions you had to make, but you know your situation and sounds like the Lord had you in His loving hands and led you to the best place for your Mother and for you. I grew to love the staff that took care of my Mother. I rejoiced in the good things in their lives and was truly concerned with the bad stuff. I miss them terribly; they became a family to my Mother and I was able to sleep at night knowing they were taking good care of her; and ultimately us. A good facility does that; you don't constantly worry if your loved one is being taken care of-you know it.

We haven't heard from you for a few days; glad to know you are still with us. Hope you have time to drop in and share with us. Take good care of yourself and your family.

So glad to know you were not in line for any tornados. Storms can be equally as intimidating. Is your storm season long? That pot roast sounds good; I am home alone this week so had a frozen vegetable teriyaki mix for my dinner. Have been busy cleaning in the basement which will take quite a long time to finish, and worked on the deck some, as well. My knee is screaming at me tonight so had to stop! A hotel in our area serves pot roast sliders-they look wonderful but I have not had them. I meet with ladies I used to work with every other month for lunch there and someone almost always orders them. Looks like they are served on the Hawaiian rolls. Just thought I would pass that on if you have leftovers to deal with.

I'm off to take some ibuprofen with the hopes I can rest tonight. Hope you all sleep peacefully tonight and free from worry, no matter what the cause. Matthew 6:34

Those sliders sound like such a great idea. We'll definitely have to try them.

After dinner last night, I put the leftovers of the post roast in zip lock freezer bags with 8 ounces of meat in them--just enough for two portions--and some of the broth to keep the meat moist. I may break some out tomorrow and do the slider thing. Thanks for the idea, Mustang. You are the best!

Today at lunch I opened a can of lentil soup and added some of the broth and mushrooms and carrots (the onions had fallen apart in the broth, so they were in there somewhere, too) left over from last night. I also added a little curry and some cumin. That soup was delish!

I thought I'd share a recipe for a cake my husband made for me when I was sick last week. It was very moist. He rarely bakes, so this was a real labor of love.

ALMOND CAKE

18 1/2 ounce package yellow cake mix
5 1/2 ounce package INSTANT vanilla pudding mix (he used sugar free)
1 cup water
1/2 cup liquid shortening or Crisco oil
1 tablespoon almond extract
4 eggs

Mix everything but the eggs together. The add one egg at a time, mixing well after each egg is added. Bake in a greased tube or bundt pan at 350 degrees for 45 minutes. Allow cake to cool in pan for 15 minutes before removing.

My husband took my recipe for the Lemon frosting (mentioned earlier in the thread) and substituted almond extract for the lemon and vanilla extract in that recipe to frost this cake. The result was a cake tasted like a real "from scratch" cake.

This cake freezes well. We started eating too much of this cake, so I cut it into slices and put it in zip lock freezer bags. That way we don't get tired of it and don't eat too much of it just because "it is there." I'm sure some of you can identify with "If they see it, they will eat it" thing going on. {#emotions_dlg.biggrin}

As of 2:00, the storms will be out of our area for the next seven to eight days. Hurrah!

I remember when we cleared out my mother's apartment and moved her to come live with us. It was a tremendous job getting it all done in the beginning. But, the peace of mind knowing we didn't have to worry about something happening when she was by herself was amazing. (She had forgotten to take some medicine that resulted in her having to be hospitalized that precipitated all this.)

I think it was such a great idea to make your mother's room look as much as her former home as possible. We did that for my mother's room as well. It was a comfort to her to have her existing bedroom furniture there. She was a major seamstress and crafter, so we brought all of that stuff we could when she made the move.

My mom had a young couple at her church she was fond of who were getting married. She gave the furniture she was nor going to use at our house to them. It made her happy to be able to do something for them and to know some of her things were going to people she knew and loved.

I am praying that things will go smoothly and that you mom will quickly adapt to her new situation. What a tremendous blessing that a room in your first choice of places opened up! Sounds like a God-incidence to me!

Thank you so much mustang66lady, I am here every day whether I "appear" or not. You are very kind to check in on me.

I am very excited about tomorrow (it takes very little to make me happy). We are getting a Fresh Thyme Market opening Wednesday and I plan to be there when the doors open. Never let it be said I passed up a free recyclable grocery bag . . . {#emotions_dlg.blush}

Now I am jealous - your DH bakes?! I can't even imagine what my kitchen would look like if mine tried, bless his heart! He just started to cook a couple of years ago. He said he was good on the grill when we got married but I soon found out different. I kept trying to tell him the grill was NOT the microwave of the outdoors! That's when I gifted him with a smoker so he would learn to slow down. While he will occasionally still grill things a little fast, he has greatly improved. Sounds like your DH had a good thought with that frosting, also. Tell him I am in awe of his skills! I am also glad you are out of the storm range for awhile, too-yeah!

I think we have a Fresh Thyme Market about 45 minutes from us. I saw it as we passed on the way somewhere else and wondered what it was about. Looking forward to your review and any other comments you have to make. Please share with us what you purchase. Have you been in one of these stores before? It is like a Trader Joes, or Whole Foods?

Hope you got some rest today after your busy week and weekend. And will keep your Mom in prayers as she learns to adjust to her new environment; hopefully it will become more home like to her soon. It took my Mom awhile, but she had suffered a stroke and had some dementia and I think she was confused a little longer. But when she finally accepted it as home, there was no going back; she loved her caregivers and they were amazing. Praying you and your Mom have the same experience.

Well I would love to give you ladies an update on Fresh Thyme Market but unfortunately I couldn't get near the place! It was to open at 7am and I got there at 6:30. The parking lot was already overflowing. I found what I hoped was a spot on the street and hiked up to the mile long line. After standing there for five minutes I heard that they had already given out the 250 passes for the free grocery bag with food (those were gone by 5:30am!) so I hightailed it back to my car. Wasn't worth getting a ticket over, I'm going to give it another try on Friday . . . details to follow!

Hi Ladies, I wondered why this thread has been on-going for such a long time. I made a very hearty version of this soup quite some time ago and thought it was THE best. Having decided to lurk a bit to find out the reason for its longevity, I now know that this thread is a treasure trove of great recipes, good information, and a whole lot of positivity, fellowship and faith. I am so glad my curiosity was on high! Vabreeze I am using my tablet so I apologize for everything appearing as one jumbled paragraph. It looks fine to me until I hit the SUBMIT key.
