I was able to resist and NOT order the Khaki Green TSV Shooties yesterday.

@RespectLife not to be a cheapo but do you think just adding some fresh squeezed lemon juice could be a suitable (and more cost effective) substitute when using regular, plain Stilton?

They have regular stilton at my Wegmans, but it's not consistent. I don't know if it sells out or they have trouble re-stocking it from their supplier. They may also rotate it out with other cheeses.
It's annoying.
Mom's Organic sells an organic stilton.
The first time I tried stilton was at the Old HIckory Steakhouse in the Gaylord Texan hotel. I've been to that restaurant at the one in Nashville and the one in DC.
I noticed that the one in DC now uses maytag and not stilton. I wonder if it's cheaper.
That's when I found out that all bleu cheese was not alike.

Do I live under a rock possibly???
Hi @ChiliPepper . . . make room under that rock for me too . . . I have heard great things about Stilton but just have never had the opportunity to splurge and buy it for myself. I had no idea it came in so many different varieties!
Is it a cooking cheese, a cheese & cracker cheese, soft, hard, cut-able, spread-able???
Ok, I guess I need to do some research.
I haven't had a chance to read @momtochloe link yet...but since I just bought the Cranberry Stilton...here is my thoughts..
It is not a slicing cheese. It crumbled as I sliced. You would not be able to really get good slices for Triscuits...
It is very soft. If I really needed it to be on crackers, I could very easily put a little of crumbs in a pile on top and mush down and mold with my fingers, but no guarantees it doesn't fall right off that cracker!...lol
It would be a great cheese to crumble in/on/over any meat/fish/entree dish/casserole/salad etc. Anywhere I would use Feta, Blue, gorgonzolla etc...I would use Stilton.
It did slightly melt when I put it on my asapagus/egg dish...but not melty, melty like a cheddar/m&C cheese.
The cranberry stilton had a sweetness to it...almost like a dessert cheese? I swear it tasted a tiny bit like cake mix to me! LOL
I might try it in my Watermelon Salad instead of Feta next time!
Well done, Respect! That was a perfect description.
While we are on the subject of British cheeses in general and Stilton in particular, you might also want to look into trying Huntsman Cheese.

Here's is some info from TD's about it. With the combo of the cheddarish Glouchester Cheese and the layers of Stilton, it is really unique and visually appealing. I like it with apples, strawberries, kiwis, grapes, or other fruits on a cheese tray or as an exotic replacement for the slice of cheddar cheddar cheese with a piece of apple pie. My husband has had it on roast beef sandwiches with a horseradish mayo and liked it a lot. Enjoy!
Trader Joe's Huntsman Cheese is a marriage of two British standards, a match made in the English countryside. Double Gloucester is a mellow, tangy, and rich double cream cheese made with the milk of Gloucester cows in the region surrounding the Cotswolds in southwestern England. Stilton is a richly-veined, smooth & creamy blue whose flavor is distinctive yet surprisingly soft. Huntsman is a layered presentation of these two classics, with four layers of the orange-hued Double Gloucester enveloping three tiers of Blue Stilton. Huntsman makes a stunning impression on a cheese tray, and adds depth and delight to a sandwich or salad.

mtc,
Since I agree with Respect that the Cranberry Stilton has a sweet taste to it, I would suggest adding some very finely chopped or grated candied lemon peel to it instead of the juice. I personally have not tried this, but I am just suggesting it. It might work.

Here is a link to a search I did on Stilton cheeses from mtc's suggestions:

It has several types of Stilton in various sizes:

Sincere thanks to @Writer with Flair and @VaBelle35 for all their help with our stilton cheese queries. Writer, that's a great idea about maybe combining candied lemon pieces in with plain stilton, genius I tell ya!
It's supposed to be in the 90's today but that isn't going to stop me from running to a place by me that has a hotdog and fries special today for $3 in honor of National Hotdog Month . . . tee hee!
