I bought whole raw beets this weekend at Wegman's with the beet greens attached.

 

I haven't made them yet....but I imagine to saute them with garlic!?

     Sounds good.  I like sauteing things in a combination of butter and oilve oil.  The fresh grated garlic (added at close to the end of the cooking time so it doesn't get hard and bitter) will be wonderful.

They are not nearly as bad as I remember and not nearly as good as ya'all said!  LOLOL!

 

They were sweeter than I remember.  However, they might just rank w/ avacado...I can live with out it!  Ha ha!  DH was in beet heaven all weekend!

 

Okay...the beet potato salad...TEE HEE!  While it tasted good and I didn't mind beets so much, nice crunch...they turned the pot salad pink!  DH ate the entire batch already but I don't think I would serve to guests!  It was SO weird looking!  Not appetizing to eat pink food!

DH loved the mustard beets...I only made the one can...it is gone.  He had never had them that way as his mom just boiled them mushy.

 

 

 

Writer...he loved your mock pickled.  I made them last night.  The cloves and cinnamon smelled so good!  He will be working on those the next couple days.

 

 

DH told me I can stop with the beets now...but I still have raw ones (and the greens) to cook.  I want to roast the beets w/  sweet pots.

 

He told me his fav way to eat beets is right out of the can.  HARUMPF.  I don't just open cans!  LOL  I have to do SOMETHING to them or it just ain't cookin' !!!

     I also have seen Apricot Stilton as well as the Cranberry and the Lemon varieties.  You were lucky to find the Cranberry.  We only see it here in the time between Thanksgiving and Christmas. 

     See if your grocer can order the Lemon Stilton for you.  It is sublime.  I think you will love it.  You can freeze it.

     So glad The Hubby liked the Mock Pickled Beets.  As I mentioned before, I love keeping a stash of them in the frig for salads.

     A lot of salad bars in our area have fresh shredded beets.  I have been know to purchase a quart of those to make mock pickled beets--no peeling or stained hands.

    For dinner tonight, I made Spaghetti Squash with a meat sauce.  It turned out well and DH wolfed it right down.  We both feel better if we don't eat too much pasta. 

     I bake the squash for 40-55 minutes at 350 degrees intil the squash is soft.  I cut it in half and remove the seeds and then use a fork to fluff it so it looks like pasta. 

     I use a jar of Spaghetti sauce, put a little olive oil in (1-2 TBSP) a pot with the sauce, and add 6-8 ounces of  browned ground beef (which I keep frozen in zip lock bags in the freezer).  I simmer the mix over low heat for 30 minutes to an hour.

     I put about a cup and a half of the shredded squash in a rim soup bowl and top it with some shredded mozarella.  I then ladle some of the sauce over the cheese and squash to cover it, and top all that with some parmesan.  I microwave it for around three minutes.  You could also make it ahead in oven-proof dishes, cover with foil, and keep in the frig until the time you want to heat it up.

     I always have some of the spaghetti squash left over after making this dish, so tomorrow, I will use my kitchen shears to cut it up into rice grain size pieces, add a little cinnamon, nutmeg, etc, a little canned evaporated milk or cream or half and half, and a sprinkling of some raisins to make a "Rice" pudding.

It is a PROPER portion but apparently not big enough to suit him. 

 

It was so fast and easy and not a kitchen mess!  Would have loved a crunchy bread to dip but my eggs cooked faster than she states.  So I didn't have the eggs as runny as I would like...so I didn't need the bread.  Next time I will reduce the cook time, runny my eggs more and hit DH over the head with crunchy bread to fill him up.

 

I crumbled the Cranberry Stilton cheese on top that @Writer with Flair recommended as well as the Parmesan cheese.

 

The lemon stilton would have given it an Eggs Benny flavor I think...YUM!  But the cranberry stilton was a nice addition IMHO!!

Hello Kitchenettes!

 

 Thank you all for the warm welcome back!   It is 11 p.m. and I am about to go to bed.  Have had my grandson all day and trying to get caught back up on everything.  Got my mail for the last week today and got caught up on emails and laundry and almost caught up on yard work.  Had a Momma rabbit give birth while we were gone, in the flower bed around our yard light.  She is still nursing her babies but my flowers desperately need water.  Not sure how to handle this as she is using the foliage for protection and food.   Still haven't had time to catch up here but is my goal tomorrow, as well as a trip to a grocery store.
