I bought whole raw beets this weekend at Wegman's with the beet greens attached.
I haven't made them yet....but I imagine to saute them with garlic!?

Ninja Sweet Beet Clarifier
Prep Time 5 minutes
Servings 1-2
So much goodness packed into this simple juice!
Ingredients
1 beet, raw, peeled, chunked,
2 carrots, scrubbed, cut in half,
1 apple, cored, cut in half,
3/4 cup water,
5 to 6 ice cubes
Instructions
Place the Top Blades in the Pitcher and add all of the ingredients in the order listed.
Select Speed 1 and flip the switch to START. Slowly increase to Speed 8 and blend until smooth.

I preordered with the email I received.
These are almost the exact same shoes we got last year...you for your daughter's wedding. I can't remember if you ever got to wear them or not weather permitting.
Last yr. they had zipper designs...this year buckles. In the midnight airing, Mark Fisher said they were such a hit...they redid the exact shoe...with a few changes. But the foot bed and height are exactly the same as last years.
They are SO comfy and easy to wear! I wore mine (3 colors last year) ALL the time. I think they look sassy even in the summer with an ankle or capri....
I missed the black leather last year...this year...I got them. And sorta, kinda the dark grey ones too. Musta been a computer glich that caused them to get into my cart.
SIGH...I am SOOOO weak!

No wait! We can't give beets a rest just yet...I didn't give my weekend update on beets!
They are not nearly as bad as I remember and not nearly as good as ya'all said! LOLOL!
They were sweeter than I remember. However, they might just rank w/ avacado...I can live with out it! Ha ha! DH was in beet heaven all weekend!
Okay...the beet potato salad...TEE HEE! While it tasted good and I didn't mind beets so much, nice crunch...they turned the pot salad pink! DH ate the entire batch already but I don't think I would serve to guests! It was SO weird looking! Not appetizing to eat pink food!
DH loved the mustard beets...I only made the one can...it is gone. He had never had them that way as his mom just boiled them mushy.
Writer...he loved your mock pickled. I made them last night. The cloves and cinnamon smelled so good! He will be working on those the next couple days.
DH told me I can stop with the beets now...but I still have raw ones (and the greens) to cook. I want to roast the beets w/ sweet pots.
He told me his fav way to eat beets is right out of the can. HARUMPF. I don't just open cans! LOL I have to do SOMETHING to them or it just ain't cookin' !!!

I get my Lemon Stilton at Whole Foods, but I bet Wegman's may have it or probably can order it for you.
Lemon Stilton is such a handy little thing to have around to make a quick "sauce" for broccoli, Brussels Sprouts, Asparagus, Green Beans, steamed Atrtichokes, etc. All you do is crumble the cheese over the hot vegetable. It melts and works like a little sauce. Num-num! You can buy a little block of it and keep it in the freezer and cut off a little bit and crumble it when you need it. That way, you will always have some on hand.
I couldn't find Lemon Stilton but my small Wegman's did have Cranberry Stilton.

It is a real crumbler and did melt so delish! I don't think it would slice very well...but any recipe as you said that uses blue or feta would be well served by this cheese.
I used it in a baked egg/asparagus dish I will post later.
I need to make a field trip to the BIG Wegman's in hopes they have the lemon. It would have been even better in this egg dish.
It is a delicious cheese...almost sweet and dessert like? Maybe that was the cranberry version taste.

Don't ask me how I got there! LOL DH asked me if it was an appetizer. Smarty pants...no.....we don't need to eat like piggies ALL the time! LOL
It is a PROPER portion but apparently not big enough to suit him.
It was so fast and easy and not a kitchen mess! Would have loved a crunchy bread to dip but my eggs cooked faster than she states. So I didn't have the eggs as runny as I would like...so I didn't need the bread. Next time I will reduce the cook time, runny my eggs more and hit DH over the head with crunchy bread to fill him up.
I crumbled the Cranberry Stilton cheese on top that @Writer with Flair recommended as well as the Parmesan cheese.
The lemon stilton would have given it an Eggs Benny flavor I think...YUM! But the cranberry stilton was a nice addition IMHO!!
Baked Eggs and Asparagus with Parmesan
(Makes two servings; You could make more than two servings, but the more you increase the amounts the trickier it will be to get everything timed right so the egg whites are firm and the yolks are still soft.)
Ingredients:
8 thick asparagus spears, cut on the diagonal into bite-sized pieces
4 eggs, room temperature
2 tsp. olive oil
salt and fresh-ground black pepper to taste
2 T Parmesan cheese
Instructions:
Preheat the oven to 400F and spray two gratin dishes with non-stick spray or olive oil. Break each egg into a small dish and let eggs come to room temperature while you roast the asparagus. (Starting with the eggs at room temperature is VERY important.)
Cut off the few inches of tough woody part at the bottom of each asparagus spear and discard. Cut the rest of each piece of asparagus on the diagonal into short pieces slightly less than 2 inches long. Put half the asparagus pieces into each gratin dish and put dishes into the oven to roast the asparagus, setting a timer for 10 minutes.
When the timer goes off after ten minutes, remove gratin dishes from the oven one at a time and carefully slide two eggs over the asparagus in each dish. Put back in the oven and set the timer for 5 minutes.
After 5 minutes (or when the egg white is starting to barely look set), remove gratin dishes one at a time again and sprinkle each with a tablespoon of coarsely-grated Parmesan. Put dishes back in the oven and cook 3 minutes, or until the white is set, the cheese is slightly melted, and the yolk is still soft then you touch it with your finger.
Serve hot. I thought this was delicious just as it is in the photo, and loved the runny yolk on the pieces of asparagus, but you could eat with toast to dip into the egg if you prefer.

I'm just finishing up a book ("A Stillness at Appomattox"
written in 1953 by Civil War historian Bruce Catton) about the final year of the war, mostly covering things from the Union perspective. Most of the Civil War books I've read before are from the Southern army's vantage point, so this book is very interesting to me.
After four long years of fighting, there was still no clear end in sight and no significant victories on either side---just thousands of dead bodies, bloody battles won and lost without necessariliy achieving any real goal, and plenty of property, economic and social damage across the country.
It's heartbreaking to read about the plundering, burning, pillaging and poverty inflicted on the natural environment and on innocent civilians, caused by rogue troops, plus many dumb decisions made by military leadership and the eventual disillusionment and disgust and fatique of both soldiers and citizens..
People just got fed up and worn out. I think some of the viciousness, polarization, and negativism that resulted from that long drawn out war is sort of like what we're seeing here and other parts of the world. People who don't have any other good target for venting frustration resort to taking it out in horrific ways on their fellow citizens. Only their reasons or motives for the violence differ, not the behavior, from what I can see.
Considering current events, I wonder whether we will still be able to recuit capable, intelligent people to serve in law enforcement. I'm beginning to fear we might not.
