Ok so good morning everybody and happy Thankful Thursday . . . Smiley Happy

 

I personally am glad that this morning is almost over.  I went to pack up the AT&T equipment and the Comcast guy #1 didn't disconnect the electrical stuff so I had to climb under the stand to dig them out and in the process must have accidently reset the Comcast stuff . . . grrrr.

 

Ran to the store and grabbed some of those Glenmark Hamburgers for the weekend.  They didn't update their registers so I got a pack of hamburger buns for free (I am tired of correcting their system for them so I just left with them in my bag).

 

I hope the weather is nice by all of you.  It is overcast and muggy here.  I thought I was sweating yesterday . . . shoulda kept my trap shut!

 

Oh and it's been confirmed, the skunks are under the steps.  Both tennis balls were on the front lawn this morning (and shoved back into the hole along with two more) . . . I can see this is going to be quite the standoff . . . Smiley Happy

@RespectLife I have a great recipe from the WP Rice Cooker Cook Book for a beef stroganoff and it uses dill pickle relish . . . please let me know if you would like to see it, it's quick, easy and yummy!

@Writer with Flair here is the Colonel Sanders Coleslaw recipe:

 

1 small to medium head of cabbage

1 to 2 carrots

1 small onion (some people do not add this)

1 cup mayo

2T cider vinegar

2T vegetable oil

1/4 cup sugar

salt and pepper to taste

 

  1. Shred cabbage, carrots and onion.
  2. Mix remaining ingredients and pour over cabbage mixture and blend well.

For best results, make this a day ahead of time and store in the refrigerator overnight.

Wolfgang Puck Beef Stroganoff (for 1-2 people)

 

Beef stew pieces, raw, thinly sliced  (4 oz)

Egg Noodles, uncooked  (1/2 cup)

Beef stock  (1/2 cup)

Kosher salt and freshly ground pepper  (to taste)

Yellow onion, thinly sliced  (1/4 cup)

Dill pickle relish  (1 tbsp)

Sour cream and chopped dill for serving  (as desired)

 

  1. Combine all ingredients, except sour cream and dill, in the rice cooker and stir.
  2. Close lid and press COOK.
  3. Cook for 30 minutes or until beef and noodles are tender.
  4. When cooking is complete, garnish as desired and serve hot with sour cream and dill.

I don't see any reason why this recipe wouldn't translate to a stove top casserole very easily.  It really is good and I giggled when I was reading through the relish posts as this was my first encounter with dill pickle relish and I like it . . . Smiley Happy

@RespectLife I was intrigued by that Maple Black Bean and Chipotle dish so I found a nice recipe on Pinterest . . . thanks for the head's up on that as I think I already have all of the ingredients in house . . . yum!
