Happy Friday Kitchenettes! 

 

Looks like there is a lot going on in the witchen kitchens today!

We had a nice evening last night at the parade, where the kids, including my grandson, got more candy than they need!  And we loved the soup I made so will share the recipe.  It is a very simple soup and I was afraid it would not have enough seasoning in it but I was wrong. 

 

White Bean, Kale, and Kielbasa Soup

 

  • bunch kale or collard greens  ( I used a container of baby kale purchased at Aldi's)
  • 2 tablespoons olive oil
  • 14 ounces kielbasa or fresh Italian sausage (mild or spicy), thinly sliced crosswise
  • 1 large leek (white and light green part only) or 1 bunch green onions, sliced (I didn't have leeks or green onions but used 1 med. sweet onion)
  • 2(15-ounce) cans white beans, such as cannellini or navy beans, rinsed and drained
  • 6 cups reduced-sodium chicken broth
  • ½ teaspoon coarse salt
  • Freshly ground black pepper
  • 1 to 2 ounces freshly grated Parmigiano Reggiano cheese
 
Instructions
  1. Rinse kale, shake dry, and cut out and discard tough center stems. Roll leaves lengthwise into a tight tube and cut crosswise into 1/4-inch strips. Set aside.
  2. Heat oil in large, heavy saucepan over medium heat. Add kielbasa and cook until browned, about 5 minutes.
  3. Add leeks and cook over medium heat about 3 minutes. Add kale and cook until wilted, about 3 minutes.
  4. Stir in beans and chicken broth. Bring to a boil, then reduce heat and simmer until kale is tender, 10 to 15 minutes. Add salt and pepper.
  5. Ladle soup into bowls. Grate cheese on top.

 

Be careful with the salt-the kielbasa is salty, so is the cheese.  I used my homemade stock which I do not salt when I make it.  Taste as you go along.  I think spinach could be substituted for the kale if you prefer or if that is what you have on hand.  The above recipe is doubled so you can half it with success but will tell you that out of the 3 of us that ate, only one bowl is remaining!

Of course, it was approx. 18 years old...from my MIL...in a Durkee little can!  I prolly could have sold it on ebay for the antique value!  LOL

 

savory; marjoram; or rosemary  were also listed.  I have rosemary only...possible a 35 year old bottle of marjoram!

 

I added sage to my cart for next Spice House order.  It is cheap!


RESPECT!  I love poultry seasoning!  I use it on everything . . . including things non-poultry . . . I bought a big jar from Penzy's with my last order!  Smiley Happy

@mustang66lady your soup looks absolutely delicious but unfortunately it does not include pork belly, sour cream or french fries so I am afraid I am going to have to take a pass . . . seriously, it looks both delicious and healthy.  Thanks so much for posting and stay safe this weekend!  Heart

Herb Substitutions

 

Basil: Oregano or thyme

 

Chervil: Tarragon or parsley

 

Chives: Green onions (scallions); onion; or leek

 

Cilantro: Parsley

 

Italian Seasoning: Blend of any of these: basil, oregano, rosemary, and ground red pepper

 

Marjoram: Basil; thyme; or savory

 

Mint: Basil; marjoram; or rosemary

 

Oregano: Thyme or basil

 

Parsley: Chervil or cilantro

 

Poultry Seasoning: Sage plus a blend of any of these: thyme, marjoram, savory, black pepper, and rosemary

 

Red Pepper Flakes (dried chiles): Dash bottled hot pepper sauce or black pepper

 

Rosemary: Thyme; tarragon; or savory

 

Sage: Poultry seasoning; savory; marjoram; or rosemary

 

Savory: Thyme; marjoram; or sage

 

Tarragon: Chervil; dash fennel seed; or dash aniseed

 

Thyme: Basil; marjoram; oregano; or savory

Thank you so much for this Chili . . . my only question is what exactly is Chervil and even more sad is that I actually have the spice (in my defense in a blend that I bought from Penzy's) . . . . Smiley Happy

I'm so sorry mtc,

I didn't realize I had a quota to fill with the soup recipe!  LOL!

But I don't know how "healthy" it is with all that sausage in it!  But it was quick, warm, and comforting!  Most everything you can stock ahead (think these long snowy winter days coming at us!) execpt for the kale.  I almost always keep kielbasa or polish sausage in the freezer for a quick meal.  I think in a pinch, you could add defrosted and drained frozen spinach at the end in place of the kale-may not look as pretty but I'm sure it would taste good. 

 

I will take my 100 lashes with a wet noodle and do better on the next soup recipe!

Well I am glad you have seen the error of your ways and get right on that BBQ beef/Mascarpone /Lipitor recipe . . . . Smiley Happy

I always thought chervil was parsley but I'm not sure LOL!!!
