I hope no one has posted this recipe before, if so, my apologies. I love fruitcake but not the work in making one, so this might be the next best thing.
QUICK FRUITCAKE
2 1/2 cups sifted all-purpose flour
1 teaspoon baking soda
2 eggs, lightly beaten
1 (28 oz.) jar prepared mincemeat pie filling
1 (14 oz.) can sweetened condensed milk
1 cup chopped walnuts
2 cups candied mixed fruit
Preheat oven to 300 degrees F. Butter cake pans (loaf pans or a bundt pan) and line with wax paper. Butter the wax paper. (If using a bundt pan, I would use Baker's Joy or Wilton's Cake Release to ensure covering all crevices)
Sift the flour with the baking soda
In a large bowl, combine eggs, mincemeat, condensed milk, fruit, and nuts. Fold in dry ingredients. Pour into prepared pans.
Bake for 2 hours, or until center springs back and top is golden brown. Cool. Turn cakes out onto wire rack; remove wax paper.
*note*
My friend who makes this cake every Christmas said she used a small angel food cake pan and 2 mini loaf pans. But also said a regular bundt pan works just as well.
