Too easy to make.
1 already made refrigerated pie crust
1 can/jar pie filling (your choice)
Let the pie crust sit for 20 minutes on the counter. Take our of package and unroll on a lightly floured surface. Use a rolling pin and extend the "circle" at least another inch.
Grab a glass or a circle cookie cutter, cut a circle in the pie crust, place a Tablespoon of filling in the center of the circle, wipe a small amount of water around the inside edge and fold over, use end of fork to seal edges.
repeat for balance of dough, have some scraps, reroll and you'll probably be able to make one more.
place on cookie sheet, no need to grease but you can use parchment to avoid cleaning pan if any filling seeps out.
bake 425 deg 10-12 minutes until light golden brown
powdered sugar dusted works well or make a glaze using powdered sugar, small amount of butter, and milk, beat with a fork until a frosting/glaze is made then zigzag on top of your treats when cooled.
sounds like a lot of work but it's not, basically little pies and you can make quick. Should yield 8 but that really depends on the size of your cutters.

I make this and it's a crowd pleaser!
Millionaire Pie
1 can crushed pineapple well drained
1 small can well drained mandarin orange, cut in half
½ C of green grapes cut in half
½ C chopped pecans
6 drained cherries with stems, or extra chopped pecans to garnish.
(One fruit may be replaced with grated coconut of the same measurement).
Juice of 1 fresh lemon
1 can sweetened condensed milk like Eaglebrand.
1 8oz cool whip, thawed.
In large bowl mix lemon juice with sweetened condensed milk.
Mix in pineapple, mandarin oranges, and chopped pecans.
Gently fold in thawed cool whip.
Pour into graham cracker crust.
Cover. Chill for at least 5-6 hours.
Garnish before serving.

It's SO yummy. This pie was "the thing" with the generations of housekeepers when cool whip came into being.

Kool-Aid Pie is my go-to for a quick dessert. Mix one pack of regular kool-aid with a can of sweetened condensed milk and 8 oz carton of Cool Whip, and pour into graham cracker crust. Chill before serving.
