I am needing to provide an array of breakfst sweets weekely for the next few months and I thought quick breads might be an easy way to get a few servings of something yummy.  I have the traditional zucchini/banana/cherry breads recipes.   I'd love a few of your own favorites if you would be kind enough to share. 

 

I look on the internet but it's not as good as having someone actually recommend a quick bread that they make for their family and that they love!

Applesauce Spice Bread
 

Applesauce Spice Bread
1 1/4 c. applesauce
1 c. sugar
1/2 c. Oil
2 eggs
3 T. milk
2 c. flour
1 t. baking soda
1/2 t. baking powder
1/2 t. cinnamon
1/2 t. nutmeg
1/4 t. allspice
1/4 t. salt
1/2 c. chopped nuts

 

Mix applesauce, sugar, oil, eggs, and milk.

Sift dry ingredients.
Stir into applesauce mixture, beat well. Fold in nuts and pour into loaf pan (greased + floured). Combine topping ingredients and sprinkle over batter. Bake 1 hour at 350*.

 

Topping:
4 T. flour
2 T. butter
4 T. sugar
2 t. cinnamon
1/4 cup chopped walnuts or pecans (optional)

Cinnamon Bread

 

 

Country Cinnamon Swirl Bread

 
Ingredients
  • 1/4 cup butter, softened
  • 1-1/3 cups sugar, divided
  • 1 large egg, room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 tablespoon ground cinnamon
 
 
Directions
  • In a large bowl, beat the butter, 1 cup sugar and egg until blended. Combine the flour, baking powder, baking soda and salt; add to egg mixture alternately with buttermilk. In a small bowl, combine the cinnamon and remaining sugar.

 

  • Pour a third of the batter into a greased 8x4-in. loaf pan; sprinkle with a third of the cinnamon sugar. Repeat layers twice. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

I Like to Eat Apples and Bananas Bread
 
Apple Banana Bread 
 
Ingredients
 
  • 1-1/2 cups mashed ripe bananas (4-5 medium)
  • 1-1/2 cups chopped peeled apples (2 medium)
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 tablespoons water
  • 2 tablespoons butter, melted
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1/2 cup caramel sundae syrup
  • 1/4 teaspoon sea salt
 
 
Directions
  • Preheat oven to 350°. Combine bananas, apples, sugars and water. Stir in melted butter. In another bowl, whisk flour, baking soda, baking powder and salt. Stir into banana mixture. Transfer to a greased and floured 9x5-in. loaf pan.

 

  • Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely.

 

  • Meanwhile, toast coconut, stirring occasionally, in a shallow pan at 350° until golden brown, 4-6 minutes. Cool slightly. Mix coconut with caramel syrup and sea salt; spread over loaf.

Iced Lemon Pound Cake 

1 yellow box cake

4.3 oz lemon pudding mix

1/2 cup vegetable oil

4 large eggs

1/2 cup milk

8 oz sour cream

6 tblsp freshly squeezed lemon juice

 

Icing

2 1/2 cup confectioners sugar

3 to 4 tblsp freshly squeezed lemon juice 

 

Preheat oven to 350 degrees F.  Spray two loaf pans generously with cooking spray.

Combine all cake ingredients. Beat until combined approx 1 1/2 min.  Divide cake into loaf pans.  Bake 45-55 minutes until golden brown and baked through. Cool for 15 min before removing from pans.

 

Prepare icing and drizzle over loaves.  Let set for 20 minutes.

 

This is a copycat of Starbucks Lemon Loaf.

 

You can also start with your own basic yellow cake from scratch.

@lovinglife - This recipe is similar to one that I make from Duncan Hines.  I assume the pudding is instant as that is what I use in my lemon pound cake but where do you find a 4.3 oz. box of pudding.  I use the 3.4 oz.box.  What brand is the size you mentioned?

I have found Jello makes a 4.3 Cook & Serve pudding mix.

Lemon Poppy Seed Bread with Sweet Lemon Orange Glaze

 

For the bread:

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 3 Tablespoons poppy seeds
  • 2 teaspoons lemon juice
  • 2 teaspoons lemon zest (grated lemon peel)
  • 1 cup oil (vegetable or canola oil)
  • 3 large eggs
  • 1 1/2 cups milk
  • 2 cups granulated sugar
  • 1 1/2 teaspoons vanilla extract

For the Glaze:

  • 1/4 cup orange juice
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees F . Grease and flour two 9-inch loaf pans. 
    (Can use two 8x4, loaves will be higher)
  2. Mix together flour, salt, baking powder and poppy seeds. In a separate bowl mix together the sugar, milk, eggs, lemon juice, lemon zest, oil, and vanilla. 
  3. Add the wet ingredients and stir until just combined. Divide batter evenly between the prepared pans.
  4. Bake for 50 - 60 min, or until a toothpick inserted into the center of the loaf comes out clean. Cool for 10 min before inverting onto a wire rack.

For the Glaze:

  1. Mix orange juice, lemon juice and vanilla extract. Add enough powdered sugar to make a glaze.
  2. Poke a few small holes in the top of the loaves and drizzle the glaze over it.

The blueberry muffin bread posted yesterday was delicious.  The post is not here today.  I didn't write it down, I wasa going to do it today.. Could it be reposted?  Thank you!
