Question about freezing pinwheels

I made pinwheels for the 4th and had 2 logs left over. For those who don't know what a pinwheel is, we made them a lot for appetizers in the 70's and 80's. ( I just gave away my age!)  It is a large tortilla spread with cream cheese and green onion, red pepper and celery. Then you roll it up into a 'log'. Wrap with plastic wrap for a day, then slice into 'pinwheels'. My question is do you think I could freeze them for a week? I have a baby shower next weekend and could use them then. Thanks!

@nanny24

You could put them back together again in a log wrapped tightly and freeze them that way.

They probably wouldn't dry out as much and should be fine.

Sometimes dairy doesn't freeze well but cream cheese may not be a problem.

Re: Question about freezing pinwheels

@nanny24  Out of curiosity I googled your question and found it is not recommended to freeze. Cream cheese can separate and become grainy when thawed which will make the pinwheel very soggy

Re: Question about freezing pinwheels

The grocery store and Costco sell pinwheels with meat. I don't know the vegetable version. I agree, freezing cream cheese does not seem like a good idea.

 If you freeze the leftovers, when you thaw them the vegetables will become soft/mushy, the cream cheese will likely separate, and the tortillas will be soggy from the wet, mushy vegetables.

Snack on the leftovers and make fresh ones for the shower.
