I froze a chuck roast in January and unwrapped it today to see how it looked. I can't really tell if it's freezer burned or not, but here's my question: At this point in time and if it has some freezer burn will that affect the tenderness or taste of the roast? I wouldn't worry too much if it was just for dh and myself, but I was hoping to invite the neighbors over because if's pretty good size. Wonder if I need to get a new roast?

@pattypeep  Good question - I've cooked things with a bit of freezer burn.  I've also really recently ate shrimp cocktail, a few pieces had freezer burn with no difference in taste.

 

Wonder how you'll fix it.  I'd put it in the crock pot, it'll for sure be tender there and it'll be delish!

If it's freezer burned the meat changes color and looks dried out.  It's very obvious.  Keeping it frozen since January is probably not long enough for it to become freezer burned.  Cook it and don't worry about it.   If a piece of meat has a small area of burn it can be cut off and the meat cooked.

I was mostly concerned about dryness, I think. I always cook pot roasts in a cooking bag in a crock pot with veggies. Heart

Since chuck is usually braised you should be fine.

If the meat isn't a pale color on the edges and doesn't look dried out, it will be fine.   I cooked 2 roasts yesterday that I froze in freezer paper last July.   They were still beautiful pieces of meat.

Ladies...I can taste anything "freezer burned".  It tastes terrible, honestly, I can't believe anyone would consume any meat, potato, shrimp etc that has been freezer burned.

Agreed. Freezer burn affects the structure of the cells and I can always taste it in proteins. Yuk!

Once meat or anything get that freezer burn taste, it's awful.  It doesn't matter how you cook it or what you season it with, the flavor tastes like freezer!  Personally, I wouldn't use it, especially if you're inviting guests.
