QUICK & EASY CHOCOLATE MOUSSE

I got this recipe through Eagle Sweetened Condensed Milk on FB & decided to try it. It is so easy & really good. There were a couple of things I wasn't sure of - it called for low fat sweetened condensed milk. The store had fat free & regular & I wasn't sure if there was a low fat version the store didn't have or it they meant the fat free but I got the regular version. I did buy the pudding in chocolate fudge that was sugar free & fat free & I also bought the Cool Whip in low fat.

Quick & Easy Chocolate Mousse

1 (14 oz.) can Eagle Brand Low Fat Sweetened Condensed Milk

1 c. cold water

1 ( 4 serving size) package chocolate instant pudding mix

1 (8 oz.) container frozen light whipped topping, thawed

Whisk sweetened condensed milk & water in a large bowl. Add pudding mix. Whisk 2 minutes or until well blended. Chill 5 minutes. Fold in whipped topping. Spoon into serving dishes. Chill. Garnish as desired. Serves 8-10.

I copied some of the nutritional info for the recipe as it is: Serv - 1/8 of recipe, 270 calories, 5 fat grams, 95 mg sodium, 50 grams carbohydrates.

When I made it, I just poured it into a lock n lock container as I was not going to serve it right away. I hope you like it, I sure did. I also think other flavors of pudding would work too.
