I always take a treat for the staff when I take a kitty to the spay/neuter clinic, and didn't feel like fussing so I threw something together off the top of my head the other day. To my surprise, this was a HUGE hit!

Pumpkin Party Poke Cake

1 box Pillsbury pumpkin spice cake mix

Ingredients listed on box to make cake, EXCEPT substitute buttermilk for the water and add 1 tsp. cinnamon or pumpkin pie spice

2 boxes Pumpkin Spice Jello instant pudding mix

4 cups milk

1 container vanilla Cool Whip

Prepare the cake in greased 9 X 13 pan.

Upon removing from over, poke holes all over the cake at 1" intervals using the handle of a wooden spoon. Let cake cool 1/2 hour or so.

Mix the 2 boxes of pudding mix with the milk; beat with a whisk.

Quickly pour the pudding mixture over the top of the cake, making sure it's completely covered.

Place the cake in the refrigerator for about an hour to give the pudding time to set up, then spread the Cool Whip over the top.

I had some autumn leaf sprinkles that I used to decorate the top - made it really pretty! {#emotions_dlg.thumbup1}

Sounds wonderful but, I will make my own whipped cream. I might even put in a shot or two of Rum Chata for an extra kick of flavor.

You just have to love poke cakes ~ so effortless.
