My Mom used to make this when I was a kid and I now make it for my family. I mention that the meatballs are large but I mean they are really large. You get 4 meatballs out of 1 1/4 lbs. of meat. They do shrink a little when you have cooked them.
POTTED MEATBALLS
1 ¼ lbs. 85% ground chopped meat
1 egg
¾ cup of Italian breadcrumbs
½ cup Pastene grated Parmesan cheese
Salt
Pepper
Small amount of dried parsley
Cold water
Olive oil
Large potatoes peeled and cut in half
3 jars of Heinz Fat free Aus Jus Beef Gravy
Mix first 7 ingredients together. Once thoroughly mixed add the olive oil and mix together. Then add the cold water and mix again. Form into 4 large meatballs.
Brown the meatballs on top of the stove in a large pot or Dutch Oven. Once browned add the gravy and heat until it starts to come to a boil. Then add the potatoes and again bring to a boil and then cover and lower to a simmer and cook for an hour.
