Saw a recipe for this and it looked delicious. It made me think of all the times I have thrown my potato peels in the trash! I feel like everyone else already knows about it, but I was surprised at how simple it is, how good it looks and it prevents waste. 

Scrub potatoes

Peel them with a knife, leaving about 1/4" potato on the peel.

Toss the peels in a bit of oil, salt, pepper and paprika.

Cook in the air fryer on 400 degrees for about 10 minutes or til golden brown

 

Serve as is or with cheese, sour cream to dip them in or your own favorite.

I then put my peeled potatoes in salted water, covered in the fridge to use the next day for mashed potatoes or whatever.

I saw this on facebook a few days ago, honestly it looked like a waste of potatoes.  If your peeling the potatoes it most likely means you don't want the skins, at least for us, I peel the potatoes because my husband doesn't like the skins.  If it was up to me i would cook them however I was making them with the peel.

A 'two for' meal. After peeling the skins, I'd boil and mash the rest of the potatoes for another meal.

I do like the potatoe skins---but that seems like a lot of extra work for the same outcome. I make twice baked spuds and I eat the whole thing---I saw that on youtube recently.
