Personally , I use Yukon or red potatoes. They have a lot flavor , but they don't tend to crumble as much as Yukons. But any potatoe is good, if in season, and cooked just right! Not too hard or too soft for me. Afro me the potato, the taste and how it is cooked determines the perfect outcome. I love the stuff rarely eat it, if once a year. I can't stop eating it once I start. Lol

@kelshar - My father either was allergic to or didn't like something in mayonnaise, so my mom made hers with sour cream. Of course she never wrote it down! She used celery and eggs, no relish, and Kraft mayonnaise.
DH's grandmother's was famous. She did not give out her recipe, but DH was her only grandson, so she gave it to me! She used Hellman's, but she didn't use relish either. ![]()

Sounds like mine but recently I have had to omit the celery for personal reasons. I have to measure every drop of salt in my husband's diet and I can measure everything with salt but celery is full of salt and yet there is no way to measure it.

My take on potato salad, simple and no measuring.
Boiled and peeled potatoes
Chopped Hard Boiled Eggs
Chopped Onion and Celery
Sliced Spanish Olives (sliced over the potato mixture, the brine gives it a tartness)
Tsp. or so of Yellow Mustard
Hellmans Mayo
Salt and Pepper to taste
Paprika

Has anyone ever used Watkins Organic Potato Salad seasoning?
Thought I would try it next time I make a batch.
I need to buy some red potatoes. DH likes it with miracle whip, mustard onions, celery, relish, hard boiled eggs, seasoning. I hate miracle whip.
Watkins ingredients: Sea salt, organic onion powder, organic sugar, organic ground yellow mustard, organic black pepper, organic celery seed, organic garlic powder, organic parsley, organic tarragon, not more than 2% tricalcium phosphate to prevent caking.

I haven't heard of putting vinegar in pototoe salad. Do you taste the vinegar ?

@Pecky I pickle my onions in red wine vinegar and a little sugar for a few minutes before stirring in with the potatoes. It provides only a slight tang.

My mom always used Miracle Whip instead of mayonnaise. In fact, I never had mayonnaise until I left home for college. To me, Miracle Whip is lighter and tangier than mayo, mayo tastes oily and heavy. Anyway, my mom used Miracle Whip in potato salad but she never added vinegar since Miracle Whip is tangy on it's own.
Everything but the kitchen sink went into potato salad: potatoes, boiled eggs, celery, green pepper, scallions, radishes, pickle relish, chopped pimentos, Miracle Whip, a splash of pickle juice, mustard, salt, pepper, garlic powder, and paprika. Macaroni salad was made the same way using elbow macaroni instead of potatoes.
During the summer weekends, we ate a lot of potato salad, bbq rotisserie chicken my Dad made on the grill, corn on the cob and apple pie for dessert. Typical Midwest meal. Ate dinner on the back patio picnic table because the house was too hot and stuffy (no air conditioning). Good times.

The potato salad recipe in Fannie Farmer's Cookbook by Marion Cunningham uses both vinegar, just a few tablespoons, and lemon juice. One time I added 50 percent more vinegar and guests were like 'Wow, that is the best potato salad! The extra vinegar was just the right touch.' You don't taste the vinegar beyond a bit of kick.
