Potato Chip Chicken Casserole

2 cups chopped, cooked chicken breast

1 cup cooked white rice

1 can cream of chicken soup

2/3 cup mayonnaise

2 T grated onion

1/2 cup chopped celery

1 can (8oz) water chestnuts-drained (I cut them at least in half)

1 tsp lemon juice

1/2 cup sharp shredded cheese

2 cups crushed potato chips

1/2 cup water

salt & pepper to taste

Preheat oven to 400.

In a large bowl combine chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt and pepper.

Mix well. Spread into lightly greased 9x13 baking dish.

Sprinkle grated cheese over the top followed by the crushed chips.

Bake for 20-25 minutes or until the chips are lightly browned.
