Potato Casserole - Lighter Version

30 Ounces Frozen Shredded Hash Brown Potatoes (we could only find 32 ounces I used all and it worked fine)

1 Teaspoom Margarine

3/4 Cup Chopped Onion

3/4 Teaspoon Black Pepper

1 10 3/4 Can Low-ft Condensed Cream of Chicken Soup

1 Cup Fat Free Sour Cream

1 1/4 Cup reduced fat shredded Cheddar Cheese

3/4 Cup fat-free skim Milk

 

Preheat oven to 375 degrees.  Coat a 9x13 inch baking dish with cooking spray.

 

Place potatoes in baking dish; set aside.

 

In a large skillet over medium high heat, Add onion and saute until soft.  Add remaining ingredients and mix well.  Pour mixture over potatoes and mix well until combined.

 

Bake 55 minutes, or until golden on top.

That certainly would lighten things up. Lots of recipes call for a whole stick of butter.
