These are yummy.

Pumpkin Pancakes

Martha Stewart Living Mag. Oct 2004

Makes 8 - 10

Mix in a medium bowl:

1-1/4 cups flour

2 Tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon ginger

1/8 teaspoon nutmeg

Pinch of cloves

Whisk together in a small bowl:

1 cup milk

6 Tablespoons pumpkin

2 Tablespoons melted butter or oil (*I use melted butter)

1 large egg

Stir wet mixture into dry ingredients. (Don't overmix.) Let set a few minutes.

Pour 1/4 to 1/3 cup batter on lightly greased griddle for each pancake.

So, if I plan a recipe that uses less than a can of pumpkin I just add the extra to the Lock & Lock I keep in the refrigerator of his pumpkin. He loves pumpkin as much as his mommy!

Hey Forrest! Well, the boy did have his difficulties growing up. He turned 4 in July and is a 90+ pound boy now. He has continued to have a ligament problem in that one leg so he's on bedrest again until January. He's doing well as long as we keep him from running and jumping, and try to keep him calm as much as possible and get plenty of rest.

Poor boy - he likes to run and jump! He gets so excited when dad gets home. Doc says he's healthy and, otherwise as long as we get this ligament fully healed, he will be good. I guess if you don't do this he could (probably would!) end up with a ligament tear and then it's a $6,000 operation.

He's a very good boy and does his best to stay calm. Here's a pic of him in his new cushy bed that we got because he cannot jump up on his love seat. Well, he could but he's not supposed to so I had to block things go keep him from jumping. Hope it copies. Flickr is really kind of weird now - ok, that didn't work.
