For really thick bone in chops, I brown them quickly on both sides in a hot skillet, then put the skillet in a 400 degree oven for 10-15 minutes to finish cooking. I make the pork chop recipe you mentioned using boneless chops that I brown off in a hot skillet. I cook instant rice, and pour into a 13x9 baking dish. The browned chops go on top of the rice. The green peppers and onions are sauteed quickly until they begin to soften, and poured over the chops. The last ingredient is 2-3 cans of tomato soup and about 1/2 to 3/4 a soup can of water mixed together and poured over top. Cover with foil and bake on 350 for about an hour. My family wants the rice to be all wet with the soup mixture, so I use 3 cans in this recipe for a 13x9 baking dish. If I make this just for my husband and I, using an 8x8 baking dish, I use less rice, 4 boneless chops, and only one can of soup.

Aside: Years ago my Mum used to make the greatest pork chop casserole - she used the thin chops, tomato rice soup, onions and peppers and served it over rice. I've been dying for that - not much of a meat eater, but I've always loved that recipe; also a simiar one with boneless chicken breasts and cream of chicken and cream of celery soup and broccoli over rice. If anyone has these recipes - probably from the 60's - I'd be grateful!
I don't know if this is helpful but I found this on Cooks.com:
PORK CHOP CASSEROLE 1 onion, sliced (sm.)
1 bell pepper, sliced
1 can tomato rice soup
2 to 4 pork chops
Salt
Pepper
Salt and pepper pork chops. Place in single layer in baking casserole dish. Place sliced peppers and onions over chops. Pour soup over all. Bake covered for about 45 minutes. Uncover and continue to bake until juices thicken slightly.
They have others if this wasn't exactly what you were looking for. I like this site as they have a lot of old fashioned, easy and delicious recipes.
You touched my heart about cooking for your furbaby. I used to go to Chipolte for my Chloe as she loved the pork Burrito Bowl. I so hope your baby girl feels better soon!

Well, Handsome is appropriately named! Jade is an English Lab - same coloring as Handsome and quite gorgeous herself!

Yes, that was my Chloe. She was my heart. I still miss her but I was blessed to have her for as long as I did.
Please know, I believe thinking positive helps tremendously and it helps our furbabies too. I think they can draw strength from us so I think you are doing the exact right thing including all of that healthy food. I know I added time onto Chloe's life and you will to! Prayers for both you and your baby girl . . . ![]()
