Re: Please help recipe friends!

I have never done them myself as I find them far too sweet, but based on the ones I have been served at various dinners over the years, most people seem to take their favorite candied yam/sweet potato recipe and ut marshmallows on top and the bake until marshmallows are the preferred shade of brown.  Or, you could just say "you know sweetie, I have never made those and I am not sure which style you would prefer.  But, if you would like to make a dish and bring it along it would be a welcome addition to our dinner."

Glad to help and I have used for just myself as well now that she has passed on.  My first Christmas without her I stayed home (no Granddaughter yet) but I still wanted as close to a homemade turkey dinner as possible.  So I reduced amounts and cooked away just for myself while crying tears.  Cut out lots of salt and sugar just for myself but the next year (2014) when my son and DDL said back to business and celebrating with our new blessing girl, I have not used the can.

Re: Please help recipe friends!

This recipe is for Kentucky Bourbon Sweet Potatoes. It comes from the McCall’s (magazine) Great American Recipe Card Collection and is attributed to The Old Talbots Tavern in Bardstown, Ky.  I used to make it for Thanksgiving dinners with friends and they always liked it. I liked it because it was really easy to make. I used Bruce’s sweet potatoes and omitted the sugar in the recipe because I thought it was too sweet.

3 cans (1 lb., 2 oz. size) vacuum-packed sweet potatoes

1 cup sugar

1/3 cup bourbon

1/2 cup (2 sticks) melted butter

1/2 tsp. vanilla extract

2 cups miniature marshmallows

Preheat oven to 350 degrees.

Drain sweet potatoes, then mash them with all other ingredients except the marshmallows.

Turn into a 2-quart shallow baking dish. Sprinkle marshmallows over the top.

Bake, uncovered, 30 minutes, or until the marshmallows are golden.

Makes 9 servings.

Re: Please help recipe friends!

@KingstonsMom  My sister brings the casserole every Thanksgiving.  The last thing she does before putting them in the oven is "decorate" them with mini marshmallows and chopped pecans.  She places them in alternating diagonal stripes across the casserole dish.  It is a very pretty presentation.  So, if you are doctoring the Bruce's yams, you may want to make them beautiful!  Smiley Happy

Bruce's Yams Cut Sweet Potatoes in Syrup 40 ozAfter decades upon decades my dear Mom finally told me this was what was her secret for sweet potatoes.  I could not speak I was so shocked.  She only used the above, extra butter and brown sugar then the marshmallow.  As a wife and Mom myself my recipe had many ingredients including orange zest which I never understood why.  Nothing compared to hers.  My recipe is at home and I am at the office or I would share with you but you may want to use my Mom's secret ingredient and just Dr. up and hide the evidence like she always did @KingstonsMom

I was planning on using Bruces, would you mind giving me her recipe for her 'additives' when it's convenient?

TIA!Heart

She just only added some butter and b. sugar to taste then heated up in the oven in a casserole dish for awhile and then browned the marshmallows on top.  I seriously could not believe it nor do I know her exact amounts but she probably did not have any.  Here we like a little tea and ice with our sugar.  All those years I boiled and peeled big huge sweet potatoes when I could have used a can opener and bag of puff clouds.  But hers was delish!!

I use canned yams too, and then use a couple of tablespoons margarine that I melt and then mix in with about a 1/2 cup light brown sugar that I make for a glaze for them, too.

I use a round casserole dish that I spray with non-stick spray first, for easy clean up.

Sometimes I'll use two small cans of yams, or the one larger size of yams. Whichever I use, I drain them out of the syrup that they come in, first.

I add just a bit of maple syrup to the mix too, or if you prefer, you can use pancake syrup if you have it. I don't add that much because I don't want it to be too sweet.

I mix this all together and stir it together, in with the yams gently, and then pour everything into the greased dish.

I bake it at 350 degrees in a preheated oven for about 25 minutes, and then add the marshmallows on top, and then watch them and let them heat through until they're done and a bit browned on top. That probably takes about another 10 minutes or so.

I love to eat them this way, but my husband doesn't care for them all that much, so I don't make them very often for us--only during the holidays, and not that often anymore.

I use either mini marshmallows or large ones--it doesn't matter to me. Smiley Happy

Re: Please help recipe friends!

@beckyb1012  OMG ...  you just brought back some amazing memories.  My Mom was a great cook,  and made almost everything from scratch,  but when it came to the holidays, and sweet potatoes,  it was these canned sweets, brown sugar, a little maple syrup and MARSHMALLOWS.  LOVED THEM.  I don't even remember the last time I had them this way.

My husband is not a big SP fan, so I'll just make one form myself every now and then, or order them when we're eating out.  I LOVE them.

Re: Please help recipe friends!

Hey IG! Merry Christmas. I am out of the hospital and found this. An old recipe we used is:

5-6 sweet potatoes ( ones with a deep orange color are better)

1/4 cup softened butter

3 T frozen ok Concentrate ( dont add water)

mini marshmallows

1 T cinnamon

1/2 cup packed brown sugar

You can add a little more cinnamon or nutmeg.

You can cut the OJ less if you want

Sweet potatoes vary in size. We went with the average sized ones instead of the tiny ones.

Peel and slice the sweet potatoes. Cook in water on stove for about 15 minutes, (want the  sweet potatoes to be soft) Drain and mash or mix in blender/ food processor.

Add 1/4 c softened butter and 3 T oj concentrate. Add the cinnamon and brown sugar. Pour in a oven safe pan and top with marshmallows. Bake for about 30 minutes at 350. Top should be a little brown.

Now that bourbon one looks good too.
