Please give me ideas for......

good recipes that can be prepared on top of the stove (my oven is broken) or crock pot.  Thanks!

 LEMON PEPPER SHRIMP

 

1 pound large shrimp, cleaned
1 T olive oil
1/4 cup fresh lemon juice
1/4 cup red pepper jelly
1 T unsalted butter

 

Heat a large nonstick skillet over med-high heat.

 

Blot shrimp with paper towel.  Season one side with kosher salt and pepper.  Add 1 T olive oil to pan.  Add shrimp salted side down.  Season other side of shrimp and turn after about 2 minutes.  Cook shrimp until done and remove from pan.  

 

Turn off heat and while pan is still hot add lemon juice, pepper jelly and butter.  Stir until well mixed.  Put shrimp back in pan to coat with sauce.

 

You can serve over rice or I like it over sauteed spinach.

I find it at our local grocery store with all the other jellies. I love it. It's great on crackers, spread on some cream cheese and top with red pepper jelly. Makes a nice appetizer.

just a little more of what you're looking for please.

 

I did this last night:

SMOKED SAUSAGE WITH PASTA

 

4 ounces of uncooked angel hair pasta

1/2 lb. reduced-fat smoked turkey sausage, cut into slices 1/2"

2 garlic cloves, minced

1 tsp.dried basil

1 T. olive oil to do the sauteing in

2 C. seeded plum tomatoes, julienned, or I used 2 C. cut up tomatoes

salt and pepper to your tastes

 

1) cook pasta according to pkg directions

Meanwhile, in large nonstick skillet, saute the sausage, mushrooms, garlic and basil in oil until the mushrooms are tender. I lid cover it for a bit to help.

2) drain pasta, add to sausage mixture

Add tomatoes, salt and pepper, toss gently. Heat through.

Feeds 4 it says, but my husband ate 2/3 of it, I forgot to tell him about 4. LOL

I like to check out the spice aisle for those packets where you put the meat in a crockpot and add a packet of spice. There's a beef stroganoff one, many chicken and pork.

We had a really tasty pasta last night.  Went to Aldi's yesterday for a few things and picked up 3 different chicken sausages flavored in very diff ways - last night's was with mozzarella cheese, peppers & onions - so good!  I sauteed more sliced red onios and colored peppers that I do, bag & freeze so I always have them, mixed with bow tie pasta.

 

Right now I have a mesquite seasoned pork tenderloin in the crockpot.  I'll shred it when it's done and we'll be having pulled pork on slider buns.

 

I LOVE using my crockpot, you do do so many meals in it.  Takes no time to rustle up someting, put in your crockpot liner, an turn it on. Slow cook thru the day, no heated kitchen in the summer either.  Don't forget to add some sort of liquid albeit a sauce, an envelope of some flavoring in water, something so that your meat/meal doesn't burn/stick.  AND NEVER forget your liner.  Makes cleanup at the end of the day EASY!

 

Toss in a bunch of chicken wings with any flavor/spices of your choice.  We love beef stroganoff too served over wide egg noodles. 

 

You could make a spaghetti sauce in it too, add in meatballs.

 

So many delicious meals, so little time!

Most grocery stores carry it now with the other jellies.  Trader Joe's also has it.

One of my favorites!
