DiAnne's quiche is something I include in all my brunch menue.  Different and delicious.  Search under DiAnne.  Another recipe I resurrected this year and had many requests for is an Easy Pineapple Casserole.  Goes well with ham or sausage casserole.  Hope it posts as copied.

 

 

Use 9" baking dish, well greased
Bake @ 350 degrees for 60 minutes

 

20 oz. can of crushed pineapple, drain and reserve juice
1 cup sugar
2 tablespoons flour
1/4 cup reserved pineapple juice
2 eggs
1 heaping Tablespoon vanilla
--------------------------------

Mix above ingredients until smooth
Pour into a greased baking dish

Before putting into oven, dot casserole with
1 tablespoon butter cur into small pieces
1 teaspoon cinnamon, or sprinkle from the jar

What do you do w/ the reserved pineapple juice from crushed pineapple? Thanks.

Okay, you got my secret!  We usually have an Aldi Spiral ham with our Brunch and I pour the leftover pineapple juice over it as it warms.  I grew up with baked ham and pineapple rings with cherries in the middle.  Happy memories for me.  I think that old-bone in ham had a small bottle of Coke poured over it.

Continued.........however, most times I double the pineapple recipe creating  an overflow of juice and just pour it over bowl cut up fresh fruit salad.
