Please Help a Simple Cook-Brunch for 8 Ideas?

I'd like to have a really nice filling Christmas Buffet Brunch that the kids could take leftovers home from too. Thanks for any ideasSmiley Happy

I think waffles and sausage would reheat well. I like eggs for brunch but best served freshly cooked.

I was thinking of a sausage and egg casserole.

 

You can make it the day before, and then heat it up that day when they come. 

 

You can always double the recipe too, if you need larger quantities. Smiley Happy

I do a Christmas Brunch every year and it is pretty simple.  Two different quiches (one of them is always smoked salmon), large platter of bacon and/or sausage, large glass bowl full of cut up fresh fruit (oranges, pineapple, grapes, melon, etc), platter of some kind of bread (rye toast, cinnamon bread toasted, etc).

If it's a buffet-stye event........Ham & cheese (or sausage patties & cheese) in biscuits or in small  slider rolls, with a little mustard and mayo on the side.

 

An egg frittata made with combination of ground sausage, chopped onion and green/yellow/red peppers, plus grated cheese......or diced ham with chopped onion and frozen chopped broccoli or spinach......or ground beef with chopped onions, peppers and cheddar cheese.

A frittata is good at a group gathering, because it carves up neatly into pizza-like slices, and even tastes good after cooling down to room temperature.
